Eggs are an excellent source of protein. Having one egg a day gives a healthy body. Boiled eggs are more good than cooked ones. The egg white takes half the portion of the protein along with Vitamin B2, B6, and B12, and contains low fat and sugar.

Eating one egg daily in any way is good for health. In this post, I am sharing egg recipes that are very easy and tasty. There are many different recipes to cook eggs from simple egg bhurji to flavourful and spicy Chettinad egg recipe but, egg bonda and egg kofta are one of the different and unique recipes to go with.

Potato Egg Bonda | Egg Kofta Curry - Choice is yours tea time snack/lunchtime curry. Potato egg bonda is one of the easy, crispy snack items and every non-vegetarian snack recipe. Usually, egg Bonda is done by dipping it in the besan batter but, in my recipe potato egg bonda, Egg is wrapped with potato mix and deep fried to make it crispier. Serve this bonda by sprinkling chat masala and black pepper powder with onion and enjoy.

We can also prepare potato egg kofta curry with this Egg Boda. Egg kofta curry will be one of the delicious, rich gravy curries with superb taste.

Potato Mix Ingredients:
  • Boiled Eggs
  • Potatoes - 6 ( Boiled & Mashed )
  • Egg – 1
  • Besan / Gram Flour / Chickpea Flour – 1 Cup
  • Red Chilli Powder – 1 ½ Tips.
  • Cumin Powder – 1 Tsp.
  • Coriander Powder – 1 Tsp.
  • Garam Masala Powder -  1 ½ Tsp.
  • Turmeric Powder – 1 Tsp.
  • Salt – As Required
  • Ginger Garlic Paste – 1 Tbsp.


Kofta Curry Ingredients:

  • Mustard Seeds – 1 Tsp.
  • Cumin Seeds – 1 Tsp.
  • Shahjeera – 1 Tsp.
  • Green Chillies – 3 Chopped
  • Onions – 1 Big Chopped
  • Curry Leaves
  • Ginger Garlic Paste – 1 Tbsp.
  • Boiled Tomato Puree – 1 Cup
  • Curd – 100 g ( 1 Cup )
  • Cashew Paste – ¼th Cup
  • Red Chilli Powder -  1 ½ tsps..
  • Cumin Powder – 1 Tsp.
  • Coriander Powder – 1 ½ Tsps.
  • Kasoori Methi – 1 Tsp.
  • Garam Masala Powder – 1 ½ Tsps.
  • Coriander Leaves
  • Salt – As Required
  • Oil

Preparation:
  • Before Starting The Recipe Boil Eggs & Potatoes.
  • Remove Egg Shell And Keep Aside
  • Peel The Potato Skin And Smash The Potatoes.
  • In Bowl, Add Smashed Potatoes, Besan, Red Chilli Powder, Cumin Powder, Coriander Powder, Garam Masala Powder, Turmeric Powder, Ginger Garlic Paste, And 1 Whole Egg.
  • Mix Well.
  • Now Take Small Ball Size Potato Mix In your Hands.
  • Flatten The Potato Mix.
  • Wrap The Boiled Egg With Potato Mix.
  • Cover Fully Without Any Opening.
  • Now Drop The Eggs Slowly In Hot Oil And Deep Fry Till Golden Colour.

For Potato Egg Bonda :

  • Sprinkle Some Chat Masala Outside The Egg.
  • Then Cut it Into Half And Sprinkle More Chat Masala And Black Pepper Powder.
  • Serve Hot With Onions.


Egg Kofta Curry Preparation:

  • In Pan Add Oil.
  • Add Mustard Seeds, Cumin Seeds & Shahjeera.
  • When The Splutter Add Chopped Green Chillies And Saute For 1 Minute.
  • Then Add Chopped Onions With Salt And Saute Till the Onions Turns Light Brown in Colour.
  • Then Add Curry Leaves, Ginger Garlic Paste & Turmeric Powder.
  • Cook Till Ginger Garlic Paste Leaves a Raw Smell.
  • Then Add Boiled Tomato Puree, Red Chilli Powder, Cumin Powder & Coriander Powder.
  • Mix Well.
  • Close And Cook For About 5 Minutes.
  • When Tomato Puree Becomes Thick And When It Releases Oil.
  • Add Curd / Yogurt, Cashew Paste And Mix Well
  • Close And Cook For About 5 Minutes.
  • Now Add Kasoori Methi, Garam Masala Powder, And Mix Well.
  • Add Fried Potato Egg Bonda.
  • Roll Slowly The The Gravy.
  • Close And Simmer For 5 More Minutes.

Step By Step Procedure With Pictures

  • Before Starting The Recipe Boil Eggs & Potatoes.
  • Remove Egg Shell And Keep Aside

Note:

  • Boil The Egg Before Cooking By Adding Salt.
  • Boil For 10 to 15 minutes.
  • Clean And Boil The Potatoes.
  • Smash The Potatoes.
  • Boil Tomatoes Before Cooking & Blend To Fine Puree.
