Many Varieties Of Kidney Beans Are Available In Market Like Red, White, Light Speckled, Red Speckled Kidneys Beans.Whatever The Beans, It As Same Nutritional Values.
As Kidneys Beans Are With High Nutritious, But Toxic When Raw. So Before Cooking, Wash & Soak The Kidney Beans Overnight.In Morning Throw The Soaked Water And Again Clean With Fresh Running Water.Then Pressure Cook The Kidney Beans As Their Are Very Hard To Become Soft.

Few Techniques Are Needed To Get Perfect Recipe.Especially With Kidney Beans. Even After Pressure Cooking The Kidney Beans Leaves Hard At Inside.To Overcome That Hardness Add A Pinch Of Baking Powder While Cooking Gives Very Soft And Moisture Beans.This Makes The Beans To Retain Their Shape Even After Many Whistles.

Rajma Masala Done With Tomato Puree And With Some Spices Goes Well With Rice / Chawal, Roti, Naan, Paratha Or Dosa.

Ingredients:

  • Rajma ( Kidney Beans ) - 1 Cup
  • Tomatoes - 4 Big
  • Cinnamon - 1 Inch
  • Baking Powder - 1/4 Tsp.
  • Bay leaf - 1
  • Mace - Few
  • Shahjeera - 1/2 Tsp
  • Dry Red Chilli - 1
  • Cloves - 2
  • Cardamom - 1
  • Green Chillies - 3 Chopped
  • Onions - 2 Big Finely Chopped
  • Curry leaves
  • Turmeric Powder - 1 Tsp.
  • Ginger Garlic Paste - 1 Tbsp.
  • Cumin Powder - 1/2 Tsp.
  • Coriander Powder - 1 1/2 Tsps.
  • Kasoori Methi ( Dry Fenugreek Leaves ) - 1 Tsp.
  • Garam Masala Powder - 1 tsp.

Preparation:

Cooking Rajma:

  • Clean And Soak The Rajma Overnight.
  • Remove Water And Wash Again With Running Water.
  • Pressure Cook The Rajma By Adding Cinnamon, Baking Powder & Salt.
  • For 1 Cup of Rajma Required 4 Cups Of Water.
  • Pressure Cook The Rajma For About 8 Whistles 
  • Note : Whistles Depends On Brand Of Pressure Cooker.

Cooking Rajma Masala Curry :

  • In Pan Add Bay Leaf, Cloves, Cardamom, Shahjeera & Red Chilli.
  • Dry Roast For 1 Second.
  • Then Add Oil, Green Chillies.
  • Saute 1 Minute.
  • Then Add Chopped Onions With Salt And Saute For 2 Minutes.
  • Then Add Curry Leaves, Turmeric Powder And Ginger Garlic Paste.
  • Saute & Cook Till Onions Becomes Light Brown Colour.
  • Then Add Boiled Tomato Puree, Red Chilli Powder, Cumin Powder & Coriander Powder.
  • Mix Well And Cook.
  • Cook Till Tomatoes Puree Becomes Thick And Releases Oil.
  • Now Open And Check If Rajma is Cooked Well.
  • Rajma Will Become Soft Yet Retains Their Shape.
  • Add Cooked Rajma And Mix Well.
  • Close And Cook For About 5 Minutes.
  • After 5 Minutes Open And Mix Once.
  • Add Kasoori Methi & Garam Masala Powder And Mix Well.
  • Note: Garam Masala Powder Includes : Cloves, Cardamom, Cinnamon & Shahjeera.
  • Close And Simmer For 10 Minutes.
  • Finally Mix And Add Freshly Chopped Coriander Leaves.
  • Mix And Serve.

  • Saute & Cook Till Onions Becomes Light Brown Colour & Releases Oil.


  • Then Add Boiled Tomato Puree, Red Chilli Powder, Cumin Powder & Coriander Powder.




  • Mix Well And Cook.


  • Cook Till Tomatoes Puree Becomes Thick And Releases Oil.

  • Now Open And Check If Rajma is Cooked Well.

  • Rajma Will Become Soft Yet Retains Their Shape.

  • Add Cooked Rajma, Sufficient Water And Mix Well.




  • Close And Cook For About 5 Minutes.

  • After 5 Minutes Open And Mix Once.

  • Add Kasoori Methi & Garam Masala Powder And Mix Well.



Note: Garam Masala Powder Includes : Cloves, Cardamom, Cinnamon & Shahjeera.
  • Close And Simmer For 10 Minutes.

  • Finally Mix And Add Freshly Chopped Coriander Leaves.


  • Mix And Serve.
