Check out the unique and tasty recipe with unattractive, healthy, and low in calories, the spiky green vegetable known as a spiny gourd. The spiny gourd is also known as Kantola or kakora in Hindi, teasle gourd, kantoli, etc.
Though the less known vegetable with huge health benefits. Kakrol has cooling, analgesic and supports heart health. It has the ability to boost the Immune system.
For this recipe firstly clean the spiny gourd very well in running water and then boil the gourd till it is done 60 percent. Then remove the edges and chop the gourd in half and keep it aside.
This recipe is done with onion tomato masala. This is one of the unique and tasty recipes with this masala. For the masala firstly chop the onions and saute the onions till it changes color. Then add chopped tomatoes and cook till the tomatoes become soft. When the tomatoes are soft, remove and keep aside till it becomes cool, and then blend the masala into a smooth paste and keep aside. Now by this, the spiny gourd is cooked 60 percent and the masala is cooked well. Now it's easy to cook the spiny gourd masala curry without the mash of the gourd.

Masala Ingredients:
- Onions - 4 Big
- Tomatoes - 4
- Sesame Seeds - 2 Tbsps.
- Coriander Seeds - 1 Tbsp.
- Cloves - 5
- Cardamom - 4
- Cinnamon - 1 Inch
- Shahi jeera - 1 Tsp.
- Oil - 2 Tbsps.
Cooking Ingredients:
- Spine Gourd - 500 g
- Oil - 4 Tbsps.
- Cumin Seeds - 1 Tsp.
- Green Chillies - 5
- Curry Leaves
- Ginger Garlic Paste - 1/2 Tbsp.
- Turmeric Powder - 1/2 Tsp.
- Kasoori Methi - 1 Tbsp.
- Water - 1 1/2 Cups
- Coriander Leaves
- Salt - As Required
- Red Chilli Powder - 1/2 Tbsp.
Preparation:
Masala Preparation:
- In a pan add oil then add onions along with salt and mix well.
- Saute till the onions turn brown and then add tomatoes.
- Close and cook for about 5 minutes till the tomatoes become soft.
- When tomatoes are soft remove and keep aside till it becomes cool.
- Then blend to smooth puree.
- In another blender add roasted sesame seeds, coriander seeds, cloves, cardamom, cinnamon, and shahjeera and blend to a fine powder.
Cooking Preparation:
- In a pan add water and bring to boil.
- When the water gets boiled to add spine gourd along with salt and mix well.
- Boil and cook for about 5 Minutes or till The spine gourd is cooked 60 percent.
- When done remove water and then chop the spine gourd by removing the edges.
- Chop and keep aside.
- In a pan add oil, when the oil gets hot add cumin seeds.
- When the seeds splutter, add green chilies, curry leaves, and kasoori methi and mix well.
- Saute well till it releases aroma.
- Then add ginger garlic paste and turmeric powder and mix well.
- Saute until it releases aroma, then add onion masala and chopped spine gourd, red chili powder, and salt.
- Mix well and close and cook for about 5 Minutes.
- After 5 minutes mix and add sesame powder along with water and mix well.
- Again close and cook for about 5 minutes.
- After 5 minutes, finally, add coriander leaves and mix well.
- Serve hot with roti, naan, or chapathi or even with plain rice along with any rasam and enjoy.
