Watermelon Kesari - With detailed recipe. As the name suggests this is a very unique recipe but same as Rava Kesari with a twist.Yummy and tasty, absolutely healthy, the delectable sweet recipe made with a twist in the rave Kesari. Most of them add color to the Rava Kesari to look delicious and colorful. But watermelon Kesari is perfect with natural color with a delicious taste of the watermelon.

Watermelon is a sweet and refreshing low-calorie summer fruit. It is a perfect natural coolant. It provides hydration and also essential nutrients including vitamins and minerals. Watermelon contains around 90% water, which makes it useful for staying hydrated in the summer. It reduces blood sugar, high blood pressure, and also heart disease risk. It helps to clean the kidney and to boost the immune system. It helps to keep skin healthy and glowing.

For this recipe all we need the same ingredients which we use for Rava Kesari but with extra ingredient watermelon instead of saffron. Firstly Chop the watermelon by removing the green part as well as the seeds. cut the watermelon into cubes and blend to puree. Even the small cubes of watermelon are also allowed as it tastes superb. That means no need for smooth puree or filtering of the juice. Before preparing for the watermelon Kesari roast the dry fruits, dry fruits in the sense whatever you have. I use almonds, cashews, melon seeds, and raisins. Not only these, but ones can also use any variety of dry fruits like walnuts, pistachio, etc. Then roast the semolina ( Rava ) in ghee. Roast on low flame till it releases a nice aroma. This is one of the main procedures for the tasty Kesari.

Ingredients:

  • Watermelon Juice- 2 Cups
  • Rava | Semolina | Sooji - 100 g Or 1/2 Cup
  • Jaggery - 3/4th cup or 120 g
  • Ghee - 1 Tbsp.
  • Skin removed almonds - 1 Tbsp.
  • Cashews - 1 Tbsp.
  • Raisins - 1 Tbsp.
  • Melon Seeds - 1 Tbsp.
  • Cardamom - 1 Tsp.
  • Oil - 1 Tbsp.

Preparation:

  • In pan ghee and Rava.
  • Roast the Rava till it releases an aroma. Then remove and keep aside.
  • In another pan add ghee.
  • When ghee melts add dry fruits and roast on low flame till it releases an aroma and turns a golden color.
  • Then remove and keep aside.
  • Now add watermelon juice and bring it to boil.
  • When juice gets to boil, add roasted Rava and mix well without lumps.
  • Then close and cook for about 5 Minutes.
  • In the meantime add jaggery to the pan with water.
  • Allow the jaggery to melt. 
  • Don't overcook the jaggery. Remove the jaggery water as soon as the it melts.
  • Skip this step if you use organic jaggery without any impurities.
  • Now filter the jaggery water and add to Rava.
  • Mix well without any lumps.
  • Close and simmer for about 5 Minutes.
  • Finally, add roasted nuts and serve.
