Vegetable Pulao - with a detailed photo and video recipe. It is a one-pot rice dish made by cooking fragrant basmati rice with aromatic spices, herbs mixed with different vegetables. This pulao can also be served as a lunch box recipe. It is most often eaten with raita or Mirchi ka salan or with any masala-based curry.
Here I used basmati rice along with mixed vegetables. Basmati Rice is a variety of long-grained aromatic rice that is traditionally grown in India. This variety of rice is popular for its distinct aroma and unique flavor. Whenever we think about pulao or biryani, the first thing that comes to our mind is basmati rice. It is famous for its delectable taste and long slender length. A bowl of good basmati rice gives a flavourful biryani or pulao. Nowadays we find brown basmati rice, which has more nutrients than its white variant and is a healthier option as it contains a good source of iron and B vitamins such as thiamine, niacin, and folate.
To get long, non-breakable, and flavourful pulao soak the rice in water for about 20 minutes before cooking. And the second put the rice in water only after getting fully boiled. Third, don't repeat mix or stir the rice. Even if we won't mix very slowly without breaking. Fourth, is choosing the perfect brand of basmati rice. These are the tips to get long, non-breakable, and flavourful pulao or biryani.
Vegetable pulao is one of the quick and healthy recipes. This pulao is loaded with mixed vegetables, green leaves, herbs, and spices. The choice of vegetables in this recipe is one's choice and one's availability. No restriction to use only these vegetables as shown in the video. Here in this post, I used capsicum, carrot, beans, gobi, peas, and potato.
Along with basmati rice and spices, another flavourful ingredient usually used in biryani's or pulao is mint and coriander. These 2 ingredients give not only flavor but also color to the recipe.

Ingredients:
- Basmati Rice - 400 g | 2 Cups
- Ghee - 1 Tbsp.
- Oil - 4 Tbsps.
- Bay leaves - 3
- Mace
- Dagad phool
- Nutmeg Powder - 1 Tsp.
- Kapok Buds - 2
- Japatri - Few
- Green chilies - 3
- Onion - 1
- Curry Leaves
- Kasoori Methi - 1/2 Tbsp.
- Ginger Garlic Paste - 1/2 Tbsp.
- Tomatoes - 2 Or 1/4th Cup
- Capsicum - 2 Or 1/4th Cup
- Carrot - 2 Or 1/4th Cup
- Cauliflower - 1/4th Cup
- Potato - 1 Big Or 1/4th Cup
- Peas - 1/4th Cup
- Beans - 1/4th Cup
- Salt - As Required
- Cashews - 8 to 10 Or more
- Coriander Leaves - 1/4th Cup Or 1 Bunch
- Mint Leaves - 1 Bunch
- Green chili - 1
- Garlic Cloves - 5
- Curd - 1/2 Cup
- Cinnamon - 1 Inch
- Cardamom - 3
- Cloves - 10
- Shahjeera - 1 Tsp.
- In a bowl add basmati rice, rinse and add water and soak for about 20 minutes.
- In a blender add coriander leaves, mint leaves, green chili, curd, cloves, cardamom, cinnamon, shah jeera and blend smoothly.
- In a pan add ghee along with oil.
- When the ghee melts, add bay leaves, mace, dagad phool, kapok buds, nutmeg powder, japatri, and cashews.
- Saute for about 1 minute then add green chilies, onions along with salt and saute well.
- When onion slightly changes color, add curry leaves, kasoori methi, and blended masala.
- Mix well and saute for 1 minute then add ginger garlic paste and saute for one more minute.
- When it releases aroma, add tomatoes, carrots, capsicum, cauliflower beans, potato along with the required salt and mix well.
- Saute for about 1 minute.
- Then close and cook for 5 minutes.
- After 5 minutes, vegetables are cooked 40 percent.
- Now add water, mix well and bring to boil.
- When water gets to boil, add soaked rice and mix well.
- Close and cook for about 5 minutes.
- After 5 minutes, open and slowly mix without breaking the rice.
- Again close and cook for about 15 minutes or till the rice os cooked well.
- Finally serve hot this healthy vegetable pulao with raita of Mirchi ka salan and enjoy.
