Shakarkandi halwa is one of the popular dessert recipes usually prepared at the festival of Shivaratri and even on any occasion. This recipe is done with sweet potato which is an excellent source of nutrients. People usually eat this on the day of Vrat or fasting due to its high fiber content. If we ask about the Vrat recipes that you can eat on any fasting ends with simple yet delicious recipes without onion and garlic, Vrat wale aloo, Sabudaana khichdi, and a few others that can be prepared during Indian fasting festivals.
They are many different shades of sweet potatoes available i.e with different shades of skin color like reddish-purple, red, white, yellow-orange, and tan. Whatever the color is but it has many benefits as it is an excellent source of Vitamin A, C, B1, B6, and B2.

To prepare any dish with this sweet potato one should thoroughly wash under running water and boil and cook with little salt and water under low flame. Cooking the sweet potato with very little water & salt on low flame increases the sweetness of the potato.

Ingredients:
- Sweet Potatoes - 4
- Almonds - 1 Tbsp Chopped Or 5 Almonds
- Cashews - 1 Tbsp Chopped Or % Cashews
- Raisins - 1 Tbsp Or 10
- Grated Fresh Coconut - 1/2 Cup
- Kesar ( Saffron Milk ) - 1/2 Cup
- Sugar - 5 Tbsps
- Cardamom Powder - 1 Tsp.
- Ghee - 1 Tbsp.
Preparation:
- Wash And Clean Sweet Potato.
- Boil The Sweet Potato With Less Water.
- Peel Off The Skin.
- Mash The Sweet Potatoes And Keep them Aside.
- In Pan Add Ghee.
- Then Chopped Almonds, Cashews, And Raisins.
- Roast On Low Flame.
- Fry Till Golden Brown Colour.
- Remove And Keep Aside.
- In The Same Pan Add Mashed Sweet Potato And Mix Well.
- Saute For About 3 Minutes.
- Then Add Grated Fresh Coconut And Mix Well.
- Saute For About 5 Minutes.
- Then Add Sugar And Saffron Milk And Mix Well.
- Saute Till The Sweet Potato Becomes Very Soft And Non-Sticky Without Lumps.
- Then Add Cardamom Powder And Mix Well.
- Finally, Add Roasted Dry Fruits And Mix Well.
- Serve Hot or Chilli, Anything Goes Very Tasty.
