Kakarakaya Pulusu | Bitter Gourd Curry- with detail photo and video recipe.kakarakaya pulusu | bitter gourd curry is one of the healthy recipes for all. of course many dislikes because of bitterness but, resting the bitter gourd with salt for about 20 minutes reduces the bitterness.
Bittergourd is a powerful antiviral property, which stimulates the immune system. Bitter gourd works great for a diabetic patient.
Firstly cleanly wash the bitter gourd under running water, then chop the bitter gourd into round shape without removing the skin. Because even the bitter gourd is nutritious for health. After chopping, add salt to the bitter gourd and rest for about 20 minutes.
( Note: One can skip the resting process if one can consume the bitter gourd as it is.)
Doing this process just reduces the bitterness so that even the kids can eat it without hesitation. After 20 minutes add water, clean and squeeze out all the water. That's it small tricks in cooking bitter gourd gives less bitterness and healthy curry for lunch.

Ingredinets:
- Bitter gourd | kakarakaya - 4 medium size
- Tamarind - 30 g
- Sesame seeds -3 Tbsps.
- Coriander Seeds - 2 Tbsps.
- Cumin Seeds - 1 Tbsp.
- Onions - 3 Big
- Green Chillies - 3 Chopped
- Curry Leaves
- Ginger garlic Paste - 1 Tbsp.
- Red chilli Powder - 1 1/2 Tbsp.
- Salt - As Required
- Oil - 7 Tbsps ( Total )
- Sugar - 1 Tbsp.
Preparation:
- Firstly clean and chop bitter gourd in a round shape.
- Add salt and rest the bitter gourd for about 20 minutes.
- After 20 minutes, add water and clean the bitter gourd and squeeze out water.
- In another bowl take cleaned tamarind and add water and soak the tamarind for about 20 minutes.
- When tamarind becomes soft, extract juice and keep aside.
- Now in a pan add oil, then add chopped onions with salt.
- Saute well till onions become light brown color.
- Then add cumin seeds, coriander seeds and saute well till it releases a nice aroma.
- Then finally add sesame seeds and saute well till it splutters.
- Then remove and add to blender and keep aside.
- When everything becomes cool add water and blend to fine paste.
- In the same pan add oil, then add fenugreek and mustard seeds.
- When they splutter add chopped onions with salt and saute well till it becomes light brown color.
- Then add chopped green chilies, curry leaves, turmeric powder, and ginger garlic paste.
- Mix well and saute till it releases a nice aroma.
- Then add chopped bitter gourd and saute for about 5 minutes.
- Then add blended masala paste, tamarind juice, red chili powder, sugar, and salt.
- Mix Well and bring to boil for about 5 minutes.
- Then close and simmer for about 15 minutes.
- Finally, add chopped coriander leaves and mix well.
- Serve hot with plain rice or with flavored rice.
