Ripe Red Chillies, these can of different varieties. Thin and the thick. The thin type of ripe red chilies is very spicy. And the thick is a dual combination of sweet and hot. If one doesn't want it to be too spicy, use a thick variety of red chilies. Even if the red chilies are too spicy add extra tamarind to the pickle, this will cut down the spiciness to the pickle.
For any pickle to have a very good shelf life and to retain the same color should be kept in the refrigerator. Many varieties with single chilies, if we store these chili paste in the fridge. We at home usually store the plain red chilies paste in the fridge for later use. We use to prepare red chili Karam, red chili mutton, red chili chicken, red chili-ginger chutney, hot sauce, and many more. All the recipes taste superb with these ripe red chilies. Surely will share even the recipe of how to store ripe red chilies for year-long with perfect measurements.
For this red chili pickle ( pandumirchi pachadi ), wash and dry the red chilies overnight. This makes to remove the moisture from the chilies. Red chilies should be wash along with the stalk, the stalk should be removed only when the chili is completely dried. This because, if the stalk is removed and washed, the water may enter inside the chili which gives very little shelf life to the pickle. Tamarind should be cleaned by removing the Seeds, hard brown shells, and fibers.
Making ripe red chilli pickle is very simple and can be done within minutes. Grind everything and add tadka to the required amount that's it. Here am showing tadka for the whole pickle as the pickle quantity is very less.

Ingredients:
- Ripe Red Chillies - 500g
- Tamarind - 125 g
- Rock Salt - 125 g
- Water - 1 Cup
- Mustard Seeds - 1 Tbsp.
- Cumin Seeds - 1 Tbsp.
- Fenugreek Seeds - 1/2 Tbsp.
- Oil - 125 g
- Urad Dal - 1 Tbsp
- Chana Dal - 1 Tbsp.
- Cumin seeds - 1 Tsp.
- Mustard Seeds - 1 Tsp.
- Dry Red Chillies - 4
- Crushed Garlic - 2 Tbsps.
- Turmeric Powder - 1/2 Tsp.
Preparation:
- To prepare a ripe red chilli pickle firstly, wash and clean the chilies overnight.
- Next, clean the tamarind.
- Now in the pan add tamarind along with water and cook the tamarind till it becomes soft and mushy.
- In another pan dry roast the mustard seeds, cumin seeds, and fenugreek and blend to a fine powder.
- In blended add cleaned red chilies, salt, Masala Powder, and blend coarsely.
- Then add cooked tamarind and blend smoothly.
- Store this pickle in an airtight glass jar and refrigerated for a year long.
- Add tadka to only a small quantity whenever required.
- But, here am sharing tadka for the whole quantity as it is very less.
- For this in another pan add oil along with mustard, cumin seeds, urad dal, and chana dal.
- When the seeds splutter, add red chilies, curry leaves, and crushed garlic and mix well.
- Saute for about a minute till it releases aroma.
- Finally, add turmeric powder and mixed with pickle.
