Yam or Elephant Foot Yam or Suran or Jimikand was one of the least favorite vegetables with the powerhouse of many nutrients. It is considered a nutrient-rich tuber vegetable and a mandatory recipe on Diwali during the Lakshmi Puja. More easily available nutritious vegetables treated as a substitute for meat. Many will have fear of eating this vegetable as it causes an "Itchy throat". One should not neglect this nutritious vegetable because of this reason. For this, yam should be cooked very carefully to avoid such reactions. Yam would be cut into cubes, fried, and then put in salt water to avoid any alkaloids or, the chopped cubes should soak in salt water before cooking. This way helps to avoid the itching in the throat and such reactions and gives a very tasty curry that just resembles the meat. This would go well either with hot roti's or pooris and even with plain rice.
Yam - is the powerhouse of many nutrients like protein, vitamins, antioxidants, minerals, high carbohydrates, and dietary fibers. Being high in fiber yam is known to help the digestive system and can be used for weight loss because of this.

Video Recipe Of Elephant Foot Yam
- Oil - 4 tbsps.
- Onion- 1
- Green Chillies - 4
- Salt - 1 Tsp.
- Fenugreek Leaves - 1 Bunch
- Curry Leaves
- Turmeric Powder - 12 Tsp.
- Ginger Garlic Paste - 1/2 Tbsp.
- Elephant Foot Yam - 200 g
- Tomatoes - 2
- Red Chilli Powder - 1 Tbsp.
- Tamarind Juice - 1/2 Cup
- Salt - 1 Tsp.
- Coriander Leaves
- Roasted Coconut - 1/2 Cup
- Cardamom - 2
- Cloves - 4
- Cinnamon - 1 Inch
- Shahi jeera - 1 Tsp.
- Coriander Seeds - 1 Tbsp.
- Garlic Cloves - 6
- Cumin Seeds - 1 Tsp.
- Water - 1/2 Cup
- In a pan add oil.
- When the oil gets heated up add onions along with green chilies and salt.
- Mix well and saute till the onions change color.
- Then add fenugreek leaves and curry leaves.
- Saute well till the fenugreek leaves release a nice aroma, then add ginger garlic paste, and turmeric powder.
- Mix well and saute till it releases aroma.
- Then add elephant foot yam and mix well and saute for about 2 minutes.
- Then add tomatoes along with red chili powder and mix well.
- Close and cook for about 10 minutes by mixing in between.
- After 10 minutes, yam cooked 60 percent.
- In the meantime prepare the masala by adding all the masala ingredients and blending to smooth paste with 1/2 cup of water.
- Then add the masala paste along with tamarind juice and mix well.
- After mixing again close and simmer for about 15 minutes.
- After 15 minutes, yam is cooked well.
- Finally, add finely chopped coriander and serve hot with plain rice or even with roti or naan.
