If you think veg curries are all about chole and paneer, think again because nature's hidden treasure mushroom is here to change that thought. Check out the new superfood done with mushrooms, cooked in a gravy made with coconut masala can be served with chapati or steamed rice.

The soft, umbrella-shaped mushroom with a creamy consistency and blend well with almost all kinds of gravies, be it a simple mushroom curry or a rich creamy mushroom gravy. Mushrooms are another most talked about veg option for rich curries at parties and function apart from paneer and chole masala. We can saute them, roast them, turn them into a delicious soup or into a spicy gravy for the meal. Whatever the way we cook, this ingredient is high in flavor and packed with nutrients.

Mushroom is considered a superfood as it contains natural sources of vitamin D and protein with zero fat and is a valuable source of fiber.

For this recipe, clean the mushroom very well and then chop the mushrooms in half. If time permits marinate the mushrooms with chili powder, salt, ginger-garlic paste, and turmeric powder. Marinating the mushrooms will give the soft and tasty mushroom while eating. And this marination is purely optional. For the coconut masala, here in this recipe, I used dry coconut for taste and cashews for the creamy and rich gravy with regular garam masala. With this masala, this mushroom curry taste just like the southern-style chicken curry with a coconut masala.

Ingredients:

Masala Ingredients:
  • Dry Coconut - 75 g or 1/2 Cup
  • Cardamom - 4
  • Cloves - 8
  • Shahjeera - 1 Tsp.
  • Cashews - 8
  • Garlic Cloves - 8
  • Coriander Seeds - 1 1/2 Tbsps.
Cooking Ingredients:
  • Mushrooms - 400g
  • Oil - 4 Tbsps.
  • Cumin Seeds - 1 Tsp.
  • Onion - 1
  • Green Chilies - 5
  • Curry Leaves
  • Mint Leaves
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Turmeric Powder - 1/2 Tsp.
  • Tomatoes - 3
  • Water - 1 Cup
  • Coriander Leaves
Preparation
  • In pan dry roast the dry coconut till it changes color.
  • Then add coriander seeds, cloves, cardamom, cinnamon, garlic cloves, and cashews.
  • Dry roast on low flame till it releases an aroma and the cashews changes color.
  • Then add shahjeera and saute for 30 seconds and keep aside.
  • When it becomes cool, blend to a fine powder.
  • In another pan add oil.
  • When the oil gets hot, add cumin seeds and saute till the seeds splutter.
  • Then add onions along with salt and mix well.
  • Saute till the onions change color.
  • Then add green chilies along with curry leaves, mint leaves, ginger garlic paste.
  • Mix well till it releases aroma then add coconut masala and turmeric powder.
  • Mix well and saute till it releases aroma, then add mushrooms along with tomatoes and chili powder.
  • Mix well and close and cook for about 10 minutes.
  • After 10 minutes mushroom releases water.
  • Now add water as required and adjust salt and add kasoori methi and again close and cook for about 5 minutes.
  • After5 minutes, the curry releases oil.
  • Finally, add coriander leaves and serve hot with chapati or even with plain rice.
