For this recipe firstly prepare the green moong dal vada. Make the vadas just before adding them to the curry for the best texture. One can use leftover vadas as well. To make the green moong dal vada, soak the dal overnight. The very next day add moong dal to the blender along with ginger, green chillies, cumin seeds, salt, coriander seeds, curry leaves, garlic ( optional ), and coriander leaves. bring it coarsely, and deep fry small vadas. And for the curry onions, tomatoes, and curry leaves along with dry coconut masala, add water to form a gravy. This green moong dal vada curry recipe is packed with the earthy goodness of protein-rich moong dal infused with a blend of fragrant spices, this dish offers a delightful balance of textures and flavors.

Ingredients:

  • Green Moong Dal Vadas 
  • Oil - 4 tbsps.
  • Mustard Seeds- 1 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Onion - 1
  • Green Chillies - 4
  • Curry Leaves
  • Fenugreek Powder -1 Tsp.
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Tomatoes - 4
  • Red CHilli Powder - 2 Tsp.
  • Coriander Leaves

Dry Coconut Masala Powder

  • Roasted Dry Coconut - 1/2 Cup
  • Cloves - 5
  • Cardamom - 4
  • Shahijeera - 1 Tsp.
  • Cinnamon - 1 Inch

Vada Ingredients:

  • Green Moong Dal - 1 1/2 Cups
  • Green Chillies -5 or 6
  • Salt - As Required
  • Cumin Seeds - 1 Tsp.
  • Coriander Seeds - 2 Tsps.
  • Curry Leaves
  • Coriander Leaves
  • Ginger - 1 Inch

Preparation


Moong Dal Vada Preparation:

  • Soak the green moong dal overnight or for about 5 to 6 hours
  • Then remove water add it to the blender and grind coarsely along with green chillies, ginger, salt, cumin seeds, coriander seeds, curry leaves, and coriander leaves.
  • Deep fry the vada to crisp and brown.

Dry Coconut Masala Preparation:

  • Blend all the dry coconut masala ingredients like dry coconut, cloves, cardamom, cinnamon, and shahjeera to fine powder.

Curry Preparation:

  • In a pan add oil, when the oil gets heated up add mustard seeds, cumin seeds, onion, and salt.
  • Mix well and saute till the onions turn golden brown.
  • Then add green chilies, curry leaves, fenugreek powder, ginger garlic paste, and turmeric powder.
  • Mix well and saute till it releases aroma.
  • Now add tomatoes along with dry coconut masala and mix well.
  • Saute till it releases an aroma add chopped vada and mix well.
  • Finally, add water to form a gravy, and let it simmer for about 10 minutes.
  • Let the vadas soak for a few minutes to absorb the flavors.
  • Adjust the consistency of the curry based on your preference.
  • Garnish with fresh coriander and serve with rice, roti, or paratha.
