The soft, juicy liver pieces coated with spicy Andhra-style masala create a beautiful balance of texture and aroma. Ingredients

For The Curry:
  • Mutton Liver - 250g
  • Oil - 3 Tbsps.
  • Mustard Oil - 2 Tbsps.
  • Bay leaves - 2
  • Onions - 1
  • Bajji Chillies - 1
  • Green Chillies - 2
  • Curry Leaves
  • Mint Leaves
  • Turmeric Powder - 1/2 Tsp.
  • Red Chilli Powder - 1 Tbsp.
  • Tomatoes - 3
  • Salt - As Required
  • Water - 1 Cup
  • Coriander Leaves
  • Daniya Powder
  • Ginger Garlic Paste - 1/2 Tbsp.
For Masala:
  • Wet Coconut - 1/4th Cup
  • Cloves - 5
  • Cardamom - 2
  • Shahijeera - 1 Tsp.
  • Cinnamon - 1 Inch
  • Japatri - Small Piece

Preparation

Step 1: Clean the liver properly
  • Wash the mutton liver gently. Remove any veins and membrane if present.
  • Do not soak for long- it hardens the liver.

Step 2: Prepare the masala
  • In a pan, add oil and roast the wet coconut till it changes colour.
  • When it becomes cool, add to the blender along with cloves, cardamom, cinnamon, shahijeera, and japatri.
  • Blend all the ingredients into a smooth powder.

Step 3: Cooking The Liver
  • Heat oil in a pan.
  • Add washed mutton liver and saute for 2 minutes on high flame.
  • Then reduce flame and cook for more 5 to 8 minutes or till it changes colour on medium flame.
Step 4: Cooking the base
  • Then add bay leaves along with onions and salt.
  • Sauté until the onions turn light golden.
  • Then add curry leaves and mint leaves and saute for more 1 minute.
  • Then add ginger garlic paste along with turmeric powder and cook until the raw smell disappears.
Step 5: Adding tomatoes
  • Then add tomatoes along with red chilli powder and cook till the tomatoes become soft and mushy.
Step 6: Adding Masala
  • Now add blended masala
Step 7: Adding water
  • If you want gravy style, add 2 cups of water and cook for a few minutes. 
  • For dry roast, simply saute until masala coats the liver.
  • For medium style, add 1 cup of water and cook for few minutes.
Step 8: Finish
  • Add daniya powder and adjust salt.
  • Finally, add coriander leaves, mix, and switch off the flame.
  • Rest the curry for 5 minutes before serving.
