Mutton Rogan Josh


Mutton Rogan Josh is A Delicious Non-Veg Curry, In Which You Can Taste Each And Every Flavour Perfectly. It Is One Of The Rich Spicy Mutton Gravy Done With All Spices And Gram Flour. It Goes good With Chapathi / Roti / Rice / Flavoured Rice.

Finally I Would Like To Highlight Some Of My Recipes Which Goes Well With Mutton Rogan Josh Are Bagara Rice | Flavoured Rice And Some Of My Non-Vegetarian Recipes Like
 Chicken Curry With Coconut Milk ,

 Chicken Kheema Fried Rice




Marinating Ingredients:

  • Mutton – 500grams
  • Red Chilli Powder- 2 Tbsp.
  • Salt – As Required
  • Ginger Garlic Paste – 1 Tbsp
  • Turmeric Powder – 1 Tsp
  • Lemon Juice – 1 Tbsp

Main Ingredients:

  • Mutton – 500grams
  • Bay Leaves - 3
  • Star Anise ( Anasa Puvvu) – 1
  • Kapok Bud (Marathi Moggu ) – 1 Small
  • Cardamom ( Elachi ) – 2
  • Shahijeera – 1 Tsp
  • Cinnamon (Dalchini) – 1 Inch
  • Green Chillies – 4 Chopped
  • Onions – 1 Big Chopped
  • Ginger Garlic Paste – 1 Tbsp.
  • Turmeric Powder – 1 Tsp
  • Roasted Gram Flour ( Besan ) – 1 Tbsp
  • Fennel(saunf) powder – 1 Tsp
  • Garam Masala Powder – 1 Tsp
  • Biryani Masala Powder – 1 Tsp
  • Coriander Powder – 1 Tsp
  • Curd | Yogurt – ½ Cup Or 3 Tbsp.
  • Fresh Coriander Leaves – ½ Cup
  • Oil – 4 Tbsp.

Preparation:

  • Firstly Clean Mutton.
  • In Cleaned Mutton Add RedChilli Powder, Salt, Ginger Garlic Paste, Turmeric Powder and Lemon Juice.
  • Rest The Marinated Mutton For About 1 Hour / Can Cook Immediately.
  • In Pressure Cooker Add The Marinated Mutton .
  • Cover The Lid And Cook The Mutton For About 5 Mins Or Till Water Releases.
  • When Water Releases From Mutton Add More Water and Pressure Cook The Mutton For About 5 – 6 Whistles
  • Whistles Depends On Brand Of Pressure Cooker
  • In Pan Add Oil
  • Add Bay Leaves, Star Anise, Kapok Bud, Cardamom(ELachi), Shahijeera & Cinnamon.
  • Add Chopped Green Chillies And Saute
  • Add Chopped Onions With Salt And Cook Till Onions Turns Golden Brown Colour.
  • Add Curry Leaves
  • Add Ginger Garlic Paste And Turmeric Powder
  • Saute Till Raw Smell Leaves.
  • Add Pressure Cooked Mutton .
  • Mix Well And Cook For About 3 Mins Or Till You Get Bubbles.
  • Then Add Thick Curd / Yogurt Of Your Choice, Fennel Powder, Garam Masala Powder, Biryani Masala Powder & Coriander Powder
  • Mix Well Cover And Cook For About 3 – 4 mins.
  • Then Add Roasted Besan / Gram Flour And Mix Well
  • Cook For About 4 Mins Then Add Freshly Chopped Coriander Leaves.
  • Mutton Rogan Josh Is Ready To Serve.

Step By Step Procedure With Pictures:


  • Firstly Clean Mutton.

  • In Cleaned Mutton Add RedChilli Powder, Salt, Ginger Garlic Paste, Turmeric Powder and Lemon Juice.





  • Rest The Marinated Mutton For About 1 Hour / Can Cook Immediately.


  • In Pressure Cooker Add The Marinated Mutton .

  • Cover The Lid And Cook The Mutton For About 5 Mins Or Till Water Releases.
  • When Water Releases From Mutton Add More Water and Pressure Cook The Mutton For About 5 – 6 Whistles


Note : Whistles Depends On Brand Of Pressure Cooker
  • In Pan Add Oil
  • Add Bay Leaves, Star Anise, Kapok Bud, Cardamom(ELachi), Shahijeera & Cinnamon.






  • Add Chopped Green Chillies And Saute

  • Add Chopped Onions With Salt And Cook Till Onions Turns Golden Brown Colour.


  • Add Curry Leaves

  • Add Ginger Garlic Paste And Turmeric Powder


  • Saute Till Raw Smell Leaves.

  • Add Pressure Cooked Mutton .

  • Mix Well And Cook For About 3 Mins Or Till You Get Bubbles.


  • Then Add Thick Curd / Yogurt Of Your Choice, Fennel Powder, Garam Masala Powder, Biryani Masala Powder & Coriander Powder





  • Mix Well Cover And Cook For About 3 – 4 mins.

  • Then Add Roasted Besan / Gram Flour And Mix Well




  • Cook For About 4 Mins Then Add Freshly Chopped Coriander Leaves.
