Bitter Gourd is used to making stir fry, pulusu, curry Or pickle. But, this is a magical recipe because it doesn’t taste bitter. The ingredients added in this recipe makes the dal taste just like mango dal. One should try these healthy and easy recipes Of bitter gourd as it contains many benefits and works like an anti-diabetic food.

Firstly cut the bitter gourd into round thick slices. Now add salt and rest it for about 20 minutes. This makes the bitter gourd loose its bitterness. Then proceed with rest of the preparation.



Ingredients:

  • Bitter Gourd / Kakarakaya / Karela – 160 g
  • Toor Dal / Kandi Pappu – 150 g
  • Tamarind – 20 g
  • Tomatoes – 250 g or 5 Big Chopped
  • Green Chillies – 3 Chopped
  • Onions – 1 Big Chopped
  • Red Chilli Powder – 1 ½ Tsps.
  • Salt – As Required
  • Turmeric Powder – 1 Tsp.
  • Oil – 1 Tbsp.

For Tempering / Seasoning:

  • Oil – 3 Tbsps.
  • Mustard Seeds – 1 Tsp.
  • Cumin Seeds – 1 Tsp.
  • Dry Red Chillies – 3
  • Crushed Garlic – 1 Tbsp.
  • Curry Leaves
  • Turmeric Powder – 1 Tsp.
  • Tamarind Juice – 1 ½ Cups
  • Coriander Leaves.

Preparation:

  • Before Cooking Cut Bitter Gourd Into Round & Thick.
  • Add Salt And Rest it For 20 Minutes.
  • After 20 Minutes Add Water And Mix Once.
  • Then Wash & Squeeze All Water And keep Aside.
  • Soak Tamarind In Water And Extract Juice.
  • Wash Toor Dal In Water.
  • Then Remove Water And Add Toor Dal Into The Pressure Cooker.
  • Add Green Chillies, Onions, Tomatoes, Bitter Gourd, Red Chilli Powder, Salt, Turmeric Powder & Oil And Mix Well.
  • Now Close The Lid And Cook On High Flame For 2 Whistles.
  • After 2 Whistles, Off The Flame And Keep Aside .
  • Tempering Preparation:
  • In Pan Add Oil.
  • Add Mustard And Cumin Seeds.
  • When They Splutter Add Dry Red Chillies, Crushed Garlic & Curry Leaves And Saute.
  • Saute Till Garlic Turns Light Brown Colour.
  • Then Add Turmeric Powder And Tamarind Juice .
  • Add Salt and Cumin Powder And Mix Well
  • Bring To Boil by Stirring Occasionally Till The Tamarind juice Becomes Lightly Thick.
  • When Complete Is Gone, Open The Lid And Mix Once.
  • Then Add Tamarind Seasoning Into The Dal And Mix Well.
  • Bring To Boil Again And Finally Add Coriander Leaves.
  • That’s It Bitter Gourd Toor Dal Is Ready To Serve.

Step By Step Preparation With Picture Of Bitter Gourd Dal | Kakarakaya Kandi Pappu

  • Before Cooking Cut Bitter Gourd Into Round & Thick.

  • Add Salt And Rest it For 20 Minutes.





  • After 20 Minutes Add Water And Mix Once.

  • Then Wash & Squeeze All Water And keep Aside.



  • Soak Tamarind In Water And Extract Juice.





  • Wash Toor Dal In Water.




  • Then Remove Water And Add Toor Dal Into The Pressure Cooker.

  • Add Green Chillies, Onions, Tomatoes, Bitter Gourd, Red Chilli Powder, Salt, Turmeric Powder & Oil And Mix Well.









  • Add Water



Note : For 1 Cup Dal = 2 Cups Water
  • Now Close The Lid And Cook On High Flame For 2 Whistles.




  • After 2 Whistles, Off The Flame And Keep Aside .


  • Tempering Preparation:
  • In Pan Add Oil.

  • Add Mustard And Cumin Seeds.


  • When They Splutter Add Dry Red Chillies, Crushed Garlic & Curry Leaves And Saute.




  • Saute Till Garlic Turns Light Brown Colour.

  • Then Add Turmeric Powder And Tamarind Juice .


  • Add Salt and Cumin Powder And Mix Well


  • Bring To Boil by Stirring Occasionally Till The Tamarind juice Becomes Lightly Thick.


  • When pressure in cooker Is Gone, Open The Lid And Mix Once.


  • Then Add Tamarind Seasoning Into The Dal And Mix Well.


  • Bring To Boil Again And Finally Add Coriander Leaves.
