Chicken Dum Biryani | Rice Recipes | Special Desi Recipes

Chicken Dum Biryani - With Detail Photo And Video Recipe.Chicken Dum Biryani Is One Of The Famous And Popular Dish.

Chicken Biryani Can Be Prepared in 2 Ways, Pakki And Kachi. This Chicken Dum Biryani is Of Kachi Method. The Raw Ingredients Are Marinated And Placed At The Bottom And Layered With Flavored Rice ( Which Is Cooked Separately ), Brown Onions, Mint And Coriander Leaves.

For Any Biryani Marinating The Chicken Is Very Important, As It Gives Very Tender, Soft And Juicy Chicken. In My Post I Did Chicken Of Kachi Method.That Means First I Marinated The Chicken Overnight With Curd / Yogurt, Mint & Coriander Leaves, Green Chillies, Fried Onions,Lemon Juice And All The Spice Powder Mix.This Marination Made My Chicken So Soft, Tender And Juicy.

Everyone Think Of Preparing Fried Onions Is Time Taking And Not An Easy. I Just Share The Secret How To Make Fried Onions.Firstly Chop The Onions Very Finely Into Long.Then Add Rice Flour And Corn Flour Of 1:1 Ratio And Mix Or Any One Flour Also Works Well. Add Flour In Time Gap Of 5 Mins.Then Remove Excess Flour From Onions And Deep Fry. This Method Gave Me Very Crispy, Golden Brown Onions.

Preparing Is Another Task While Doing Dum Biryani Because The Rice Should Not Be Over Cooked.Cook The Rice Till 80 Percent Done Or Till 3/4th Done.Another 20 Percent Or 1/4th Is Cooked While Doing Dum.

Finally I Want To Higlight Some Of My Recipes Like

Video Recipe Of Chicken Dum Biryani 


Ingredients:

Marination Ingredients:

  • Chicken - 500 g
  • Curd /Yogurt - 180 g
  • Fried Onions - 1/2 Cup
  • Coriander Leaves - 1 Bunch / 1/2 Cup
  • Mint Leaves - 1 Bunch / 1 Cup
  • Green Chillies - 6 Chopped
  • Salt - As Required
  • Red Chilli Powder - 1 1/2 Tbsp.
  • Turmeric Powder - 1 1/2 Tsps,
  • Ginger Garlic Paste- 1 1/2 Tbsp.
  • Lemon Juice - 1 Tbsp.
  • Oil - 1 Tbsp.
  • Cumin Powder - 1 Tsp.
  • Coriander Powder - 1 1/2 Tsps.
  • Garam Masala Powder - 2 Tsps.

Cooking Rice Ingredients:

  • Basmati Rice - 500 g
  • Oil - 2 Tbsps.
  • Bay Leaves - 2
  • Cardamom - 2
  • Cloves - 4
  • Cinnamon - 1 Inch
  • Shahjeera - 1 Tsp.
  • Mace ( Javitri ) - Few
  • Star Anise - 1
  • Kapok Buds ( Marathi Moggu ) - 2
  • Biryani Flower / Black Stone - Few
  • Nutmeg Powder - 1 Tsp.
  • Water - 1 Cup Rice = 3 Cups Water

Assembling Ingredients:

  • Iron Pan / Non-Stick Kadai
  • Marinated Chicken
  • 80 Percent Cooked Rice
  • Fried Onions
  • Mint Leaves
  • Coriander Leaves
  • Ghee
  • Chapathi Dough

Preparation:

Marination Preparation:

  • In Bowl, Take Cleaned Chicken.
  • Then Add All The Ingredients Present Under Marination Ingredients.
  • Mix Well And Rest It Atleast For  3 Hours Or Overnight.

Cooking Rice Preparation:

  • In Pan Add Oil .
  • Then Add All The Cooking Rice Ingredients One by One.
  • Saute 1 Minute Then Add Water.
  • Add Salt And Check Water, If Salt Is As Required.
  • Then Bring The Water To Boil.
  • Now Add Soaked Basmati Rice Into Water And Mix
  • Bring to Boil Again.
  • Cook The Rice For About 80 Percent or 3/4 th Done.
  • Then Remove Water And Keep Aside.

Assembling Preparation:

  • Firstly Put Iron Pan ( Optional ) Or Can Use Non-Stick Pan.
  • Note : Iron Pan Is Used For Non Sticking Of Rice At The Bottom.
  • Then Add Marinated Chicken to The Pan.
  • Spread The Chicken Evenly.
  • Then Add Cooked Rice And Spread Evenly.
  • Then Add Fried Onions, Ghee, Mint & Coriander Leaves 
  • Now Again Add Second Layer Of Rice And Spread.
  • Again Repeat The Same Fried Onions, Ghee, Mint & Coriander Leaves.
  • Add All the remaining Rice And Spread.
  • Now Seal The Lid With Chapathi Dough.
  • Close And Press Tightly.
  • Cook On Low Flame For About 5 Minutes, Then on Low Flame For About 20 Minutes. 
  • Or Cook On Medium Flame For About 25 Minutes.
  • Then Off The Flame And Let it Sit For About 5 Minutes.
  • Then Open And Mix Or Directly Serve As Per Your Wish.
  • That's It Chicken Dum Biryani Is Ready.

Detail Photo Recipe of Chicken Dum Biryani

Marination Preparation:

  • In Bowl, Take Cleaned Chicken.

  • Then Add All The Ingredients Present Under Marination Ingredients.














  • Mix Well And Rest It Atleast For  3 Hours Or Overnight.


Cooking Rice Preparation:

  • Clean And Soak  Basmati Rice In Water For About 15 Mins.



  • In Pan Add Oil .

  • Then Add All The Cooking Rice Ingredients One by One.











  • Saute 1 Minute Then Add Water.


  • Add Salt And Check Water, If Salt Is As Required.


  • Then Bring The Water To Boil.

  • Now Remove Water And Add Soaked Basmati Rice Into Water And Mix


  • Bring to Boil Again.

  • Cook The Rice For About 80 Percent or 3/4 th Done.



  • Then Remove Water And Keep Aside.

Assembling Preparation:

  • Firstly Put Iron Pan ( Optional ) Or Can Use Non-Stick Pan.

Note : Iron Pan Is Used For Non Sticking Of Rice At The Bottom.


  • Then Add Marinated Chicken to The Pan.


  • Spread The Chicken Evenly.

  • Then Add Cooked Rice And Spread Evenly.


  • Then Add Fried Onions, Ghee, Mint & Coriander Leaves

Coriander Leaves



  • Now Again Add Second Layer Of Rice And Spread.

  • Again Repeat The Same Fried Onions, Ghee, Mint & Coriander Leaves.






  • Add All the remaining Rice And Spread.


  • Now Seal The Lid With Chapathi Dough.

  • Close And Press Tightly.

  • Cook On Low Flame For About 5 Minutes, Then on Low Flame For About 20 Minutes. 
  • Or Cook On Medium Flame For About 25 Minutes.


  • Then Off The Flame And Let it Sit For About 5 Minutes.

  • Then Open And Mix Or Directly Serve As Per Your Wish.
