Mutton Masala | Laal Maas Mutton Curry | Special Desi Recipes


Mutton Masala - with detailed photo and video recipe.A bright red colored delicious dish of thick gravy mutton curry prepared in a sauce of curd/yogurt and hot spices along with a touch of Kashmiri chilies. For this mutton masala, I used Kashmiri chilies instead of mathania chilies, as these Kashmiri chilies are an affordable and easily available ingredient to get a bright red color.

Firstly soak Kashmiri chilies and then blend chilies along with curd. Add this blended Mirchi curd with muton and mix well and marinate it at least for about 30 minutes. After marination pressure cooks the mutton for about 5 whistles. In the meantime add the tempering and add the pressure cooked mutton and serve hot.

For laal maas mutton recipe,mathania chilies are used to prepared authentic Rajasthan laal maas. Traditional royal families used to make it with mathania chilies. It gives the dish a deep red color and a wonderful smell. To make authentic Rajasthani laal maas mathania chilies are used but, affordable and easily available ingredient to get bright red color Kashmiri chilies are best.

Ingredients:

Marination Ingredients:

  • Mutton - 500 g
  • Kashmiri Red Chillies - 3
  • Curd - 180 g / 1 Cup
  • Red Chilli Powder - 1 Tbsp.
  • Ginger Garlic Paste - 1 Tbsp.
  • Salt - 1/2 Tbsp. Or As Required
  • Turmeric Powder - 1/4th Tsp.

Cooking Mutton Masala Ingredients:

  • Oil - 4 Tbsps.
  • Shahjeera - 1 Tsp.
  • Onions - 2
  • Green Chillies - 4
  • Salt - As Required
  • Curry Leaves 
  • Kasoori Methi - 1/2 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Ginger Garlic Paste - 1 Tbsp.
  • Garam Masala Powder - 1 Tsp.
  • Coriander Powder - 1 Tsp.
  • Cumin Powder - 1/2 Tsp.
  • Coriander Leaves

Preparation


  • In a bowl add Kashmiri red chilies along with hot water and soak the chilies for about 15 minutes.
  • In another bowl add cleaned mutton along with red chilies, salt, ginger-garlic paste, salt, and turmeric powder.
  • Now remove water and add the soaked Kashmiri red chilies along with curd and blend to smooth paste.
  • Add the blended red chili curd paste and mix well. Marinate for about 1 hour.
  • In a pressure cooker add oil, crushed cardamoms. crushed cloves, cinnamon, and shahjeera and saute 1 minute.
  • Then add the marinated mutton and mix well.
  • Cook for about 2 minutes.
  • Mutton releases water, then add 1 cup of water and mix well.
  • Bring to boil and pressure cook for 5 whistles.
  • In a pan add oil then add shahjeera, onions, green chilies, and salt.
  • Mix well and saute till it changes color.
  • Then add curry leaves, kasoori methi, ginger garlic paste, and turmeric powder and mix well.
  • Saute till it releases the aroma.
  • Then add pressure cooked mutton, garam masala powder, cumin powder, coriander powder and mix well.
  • Close and simmer for about 10 minutes.
  • Finally, add coriander leaves and mix well.
  • Serve hot with plain rice or even with roti/chapati / naan and enjoy.

  • In a pan add oil then add shahjeera, onions, green chilies, and salt.





  • Mix well and saute till it changes color.
  • Then add curry leaves, kasoori methi, ginger garlic paste, and turmeric powder and mix well.




  • Saute till it releases the aroma. Then add tomatoes and cook till the tomatoes become soft and mushy.






  • Then add pressure cooked mutton, garam masala powder, cumin powder, coriander powder and mix well.






  • Close and simmer for about 10 minutes.

  • Finally, add coriander leaves and mix well.


  • Serve hot with plain rice or even with roti / chapathi / naan and enjoy.
