Ridge gourd is also called as " Beerakaya " In Telugu, "Torai" In Hindi, " Peerkangai " In Tamil. Less know vegetable had many health benefits. Fewer ingredients more tasty curry with this ridge gourd.Ridge gourd curry is easy to prepare when you are in a hurry. Adding more onions in the curry gives more taste as well as works as a more cooling agent in hot summers. The volatile oil in onion helps to regulate body temperature.

Ingredients:
- Ridge Gourd - 400g
- Onions - 3 Big
- Green Chillies - 6 ( Less Spice )
- Mustard Seeds - 1/2 Tsp.
- Cumin Seeds - 1/2 Tsp.
- Curry Leaves
- Turmeric Powder - 1/2 Tsp.
- Ginger Garlic Paste - 1 Tbsp.
- Salt - As Required
- Coriander Leaves
Preparation:
- In pan add oil.
- Then add mustard seeds and cumin seeds.
- When seeds get splutter add chopped onions along with salt and mix well.
- Saute for about 2 minutes then add curry leaves, turmeric powder and ginger garlic paste.
- Mix well and saute till it releases aroma.
- Then add chopped ridge gourd and mix well.
- Close and cook for about 5 minutes.
- After 5 minutes ridge gourd releases water.
- Mix well and again close and simmer for about 10 minutes.
- Finally, add coriander leaves and serve hot with plain rice or even with roti or naan.
