Bitter Gourd Curry | Karela Fry | Special Desi Recipes

Bitter Gourd Fry - with detail photo and video recipe.Tasty and Tangy bitter gourd fry curry done with tamarind jaggery and sesame. This is recipe is of kind bitter gourd which doesn't taste bitter. If the curry still tastes bitter try to add some more jaggery and enjoy. Of course, adding jaggery and tamarind is of unhealthy version but, once in a month is ok only, if you want to taste different varieties.

Bittergourd is a powerful antiviral property, which stimulates the immune system. Bitter gourd works great for a diabetic patient.

Firstly cleanly wash the bitter gourd under running water, then chop the bitter gourd into round shape without removing the skin. Because even the bitter gourd is nutritious for health. After chopping,  add salt to the bitter gourd and rest for about 20 minutes.

      ( NoteOne can skip the resting process if one can consume the bitter gourd as it is.)

Doing this process just reduces the bitterness so that even the kids can eat it without hesitation. After 20 minutes add water, clean and squeeze out all the water. That's it small tricks in cooking bitter gourd gives less bitterness and healthy curry for lunch.

Ingredients:


  • Bitter Gourds | Karela - 400 g
  • Sesame Seeds - 1/4th Cup
  • Tamarind - Big Lemon Size
  • Oil - 4 Tbsps.
  • Cumin Seeds - 1 Tbsp.
  • Green Chillies - 3
  • Curry Leaves 
  • Onion - 1 Big
  • Red Chilli Powder - 1 Tbsp.
  • Jaggery - 1.5 Tbsps.
  • Salt - As Required
  • Coriander Leaves
  • Turmeric Powder - 1/4th Tsp.
  • Crushed Garlic - 1 Tbsp.

Preparation:

  • In a pan dry roast the sesame seeds and cumin seeds on low flame.
  • When seeds splutter remove and when cool add to blender and blend to a fine powder.
  • In Bowl add tamarind, Clean and soak tamarind in water for about 20 Minutes.
  • Then Extract juice from tamarind, filter and keep aside.
  • Now in a pan add oil, then add cumin seeds, onions along with salt.
  • Mix well and saute till the onions turn light brown color.
  • Then add green chilies, curry leaves and saute for about 2 minutes.
  • Then add turmeric powder along with karela( Bitter Gourd ) and Mix well.
  • Saute the karela well in intervals till the bitter gourd turns brown color and cook 80 percent.
  • Then add crushed garlic and saute 1 Minute.
  • When it releases aroma add tamarind juice, red chili powder and cook on high flame it becomes thick.
  • Then add jaggery along with sesame cumin powder and mix well.
  • Saute well till the curry leaves oil then add coriander leaves and serve.
  • This recipe goes well either with chapati or even with plain rice.
