Turai Egg Bhurji | Ridge Gourd Egg Curry - with detail step to step recipe for perfect egg bhurji with ridge gourd.Simple and easy curry within minutes. Ridge gourd is also called as " Beerakaya " In Telugu, "Turai" In Hindi, " Peerkangai " In Tamil. Fewer know vegetables had many health benefits. Fewer ingredients tastier curry Ridge gourd curry is easy to prepare when you are in a hurry. Adding more onions in the curry along with eggs gives more taste of different styles

Ridge gourd is extremely rich in dietary fiber and helps in weight reduction. It regulates blood sugar levels and boosts immunity.Turai helps to reduce constipation and removes dead skin cells and beneficial for the skin.

Firstly clean, peel and chop the ridge gourd into small pieces. For this recipe, cook the ridge gourd completely just like the curry then add eggs into it and scramble the eggs mixture. This is one of the perfect egg recipes when we want something different and tasty egg recipe.

Ingredients

  • Oil - 4 Tbsps.
  • Mustard Seeds - 1 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Onions - 1 Big
  • Green Chillies - 3
  • Dry Red Chillies - 3
  • Curry Leaves
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Salt - As Required
  • Eggs -5
  • Coriander Leaves 
  • Ridge Gourd - 500g

Preparation

  • In a pan add oil, when oil gets heated add mustard and cumin seeds.
  • When seeds splutter add onions along with green chilies, dry red chilies and mix well.
  • Saute well till it becomes translucent.
  • Then add curry leaves, ginger garlic paste, and turmeric powder.
  • Mix well and saute till it releases aroma.
  • When it releases oil and aroma add skinned removed TURAI | RIDGE GOURD | BEERAKAYA
  • Mix well and cook.
  • Close and cook for about 5 Minutes.
  • After 5 minutes turai releases water.
  • Mix well and again close and cook for about 10 minutes, till the turai is Cooked 90 percent.
  • Then add eggs into the turai and mix slowly.
  • Close and cook for about 5 Minutes.
  • After 5 Minutes open and turn the egg and mix well.
  • Again close and simmer for about 10 minutes or till it releases oil.
  • That's it finally adds coriander leaves and serve hot with chapati, roti or even with plain rice.
