Chettinad Chicken Fry-The Fiery base gravy made with a combination of the tanginess of tomatoes and tamarind, the sweetness of the onions and cinnamon, and the heat from chilies and pepper, and the flavors from mild spices, all of these together make this dish a treat for your senses.

Simple stir fry chicken cooked with classic Chettinad flavors, a spicy, so yummy and addictive recipe of Chettinad chicken fry curry.

Chettinadu is a region located mainly in the Sivaganga district of Tamil Nadu. Tamil Nadu boasts of a brilliant variety of delicacies that simmer in its local kitchen. Chettinad preparation is top of the pile. Chettinad curries are believed to be the spiciest cuisines in India. Chettinad cuisine is known for the complexity of flavors even though the preparation and presentation are simple. Most of the traditional dishes are loaded with pepper along with spices like star anise, Marathi mokku, and japatri. Chettinad masala is prepared from freshly roasted and grounded spices like fennel seeds, coriander seeds, cumin seeds, cloves, cardamom, cinnamon, dry red chilies, tamarind, shahi jeera, and garlic. The distinct and mild spice aroma of this masala makes any dish to perfection.

Marination Ingredients:

  • Chicken - 500g
  • Salt - 1 Tsp.
  • Turmeric Powder - 1/4th Tsp.
  • Ginger Garlic Paste - 1 Tbsp.

Chettinad Masala Ingredients

  • Oil - 1 Tbsp.
  • Kashmiri Chillies - 2
  • Dry Red Chillies - 6
  • Dry Coconut - 1/4th Cup.
  • Garlic - 1 Garlic Bulb
  • Cloves - 10
  • Cardamom - 3
  • Cinnamon - 1 Inch
  • Cashews - 6
  • Peppercorn - 20
  • Star Anise - 1
  • Japatri - 1 Inch
  • Coriander Seeds - 1 Tbsp.
  • Shahjeera - 1 Tsp.
  • Cumin Seeds - 1/2 Tsp.
  • Fennel Seeds - 1/2 Tsp.
  • Tamarind - Small Lemon Size

Cooking Chettinad Chicken Fry Ingredients

  • Mustard Oil - 2 Tbsps.
  • Oil - 4 Tbsps.
  • Bay Leaves - 2
  • Onions - 2
  • Green Chillies - 6
  • Curry Leaves
  • Kasoori Methi - 1 Tbsp.
  • Ginger Juliens - 1 1/2 Tbsps.
  • Turmeric Powder - 1/4th Tsp.
  • Tomatoes - 3
  • Coriander Leaves 

 Chicken Marination Preparation:

  • Firstly clean the chicken and soak the chicken in saltwater for about 15 Minutes.
  • Then add salt, turmeric powder, ginger garlic paste, and oil.
  • Mix well and marinate for about 30 minutes or overnight.

Chettinad Masala Preparation:

  • In a pan add oil, dry red chilies, Kashmiri chilies, and roast chilies.
  • Then add garlic cloves, dry coconut, cashews and saute for about 2 minutes.
  • Then add coriander seeds, shah jeera, fennel seeds, cloves, cardamom, cinnamon, Star Anise, Japatri, tamarind and saute well till it releases aroma.
  • When it changes color and releases aroma, remove and keep it aside.

Cooking Chettinad Chicken Preparation:

  • In another pan add mustard oil. Heat the oil till smoky then add oil.
  • When oil gets heated up add onions along with salt.
  • Mix well and saute for about 2 Minutes.
  • Then add green chilies, curry leaves, ginger julienned, and kasoori methi.
  • Mix well and saute till it releases aroma.
  • Then add turmeric powder and mix well.
  • Then add the marinated chicken along with 2 tsp. of blended masala and saute till the chicken changes color.
  • Then add chopped tomatoes and mix well.
  • Now close and cook the chicken for about 10 Minutes by stirring in-between.
  • After 10-minute chicken releases water.
  • Mix well and add remaining masala and mix well.
  • Again Close and cook till the chicken is cooked well and all the water disappears.
  • Then finally add few curry leaves and mix well.
  • Then add chopped coriander and mix well.
  • That's it serves hot along with roti, naan, chapati, or even with plain rice along with Pappu chaaru and enjoy.
