Baby Corn Recipe - with a detailed photo and video recipe. It is one of the unique, easy, aromatic, and tasty recipes done with baby corn, onion, capsicum, and tomato.

Baby corn is also known as young corn, cornets or baby sweet corn is a cereal grain taken from corn and harvested when they are small in size and immature. The sun-kissed yellow, crispy and crunchy baby corn is eaten whole or chopped diagonally for style. It goes well with any vegetable, can be cooked easily, and can also be eaten raw. As corn is considered a starchy vegetable because of its carbohydrates content, but baby corn has the make-up of a nonstarchy one. It has many health benefits and keeps your appetite in check.

It's rich in protein, vitamins, iron, and phosphorus and a great source of fiber. It is also rich in vitamin C, E, and antioxidants which work wonders for hair and skin.

Ingredients:

  • Baby Corn - 450 g
  • Capsicum - 2
  • Tomato - 2
  • Water - As Required for Boiling
  • Oil - 4 Tbsps.
  • Green Chillies - 3
  • Chopped Garlic - 1 1/2 Tbsps.
  • Chopped Ginger - 1 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Red Chilli Powder - 1 Tsp.
  • Curry Leaves
  • Kasoori Methi - 1/2 Tbsp.
  • Vinegar - 1 Tbsp.
  • Soya Sauce - 1 Tbsp.
  • Garam Masala Powder - 1/2 Tsp.
  • Crushed Pepper - 1 Tsp.
  • Coriander Leaves

Preparation:

  • In a pan add water and bring to boil.
  • Now add diagonally chopped baby corn along with salt and boil for about 5 minutes.
  • Then remove from water and keep aside.
  • In pan add oil then add onion cube, capsicum cubesalong with salt and saute for about 2 minutes then add tomato cubes and saute for about another 1 minute.
  • In another or same pan add oil, then add chopped green chilies, garlic, and ginger and mix well and saute.
  • When it releases aroma, add curry leaves and kasoori methi and saute well.
  • When it releases aroma add turmeric powder along with red chili powder and mix well.
  • Now add vinegar and soya sauce and mix well on high flame.
  • Now add boiled baby corn and saute for about 5 minutes.
  • Then close and cook for 10 minutes.
  • After 10 minutes open and mix well, then add garam masala powder, crushed pepper powder, and mix well.
  • Then again close and cook for about 5 minutes.
  • After 5 minutes baby corn is cooked well and coated well.
  • Now add half cooked onion, capsicum, and tomato.
  • Mix well close and cook for about 5 minutes.
  • Finally, add coriander leaves and serve hot and enjoy.
