Soya Matar Special Desi Recipes

Soya Matar Masala | à°¸ొà°¯ా బఠాà°£ీ మసాà°²ా | सोया मटर मसाला | Special Desi Recipes

Many thesis and talk surround the soya beans, but there is no denying the fact that soya holds the pride of place in the vegetarian world. Soya Chunk is considered the perfect substitute for meat and it is the power pack of protein and essential nutrients. When these soya chunks combined with the goodness of green peas is a nice variation to your regular weekday main meal preparation without much messy.

The main ingredients in this recipe are Soya Chunks, which are great for cooking various recipes. It is usually made with soy flour that has been ' defatted' or the oil is removed. This hard and rough texture of soya chunks quickly changes to soft and spongy as soon as submerged in warm water or added to the gravy. In post I just soaked the soya chunks in hot water for about 5 minutes. Then these chunks are cooked in gravy for about 15 minutes for perfect texture and super tasty and juicy soya chunks

The other ingredient used in this recipe is green peas. These are easily available around the year but, the best time to relish fresh green peas is in winters. The pea is most commonly the small spherical seeds or the seed-pod of the pod fruit Pisum Sativum. It is also called garden peas. Each pod contains several peas, which can be green or yellow. While both the peas are healthy and nutritious, the biggest difference is in the flavor. Yellow peas are milder than green peas and have a nutty taste with slightly sweet and have an appealing earthiness. Whereas fresh peas are sweet and plump.

Peas are a good source of vitamins C, E Zinc, and antioxidants that strengthen your immune system. These peas are a good source of plant protein, the people who follow a plant-based diet add these proteins into your diet in several ways. The high amount of fiber in peas promotes healthy digestive health.
I just added the peas into the gravy along with soya chunks and cooked for about 15 minutes. These give the gravy very tasty and aromatic with the taste of the peas.

Ingredients:

  • Soya Chunks - 1 Cup
  • Matar - 1 Cup
  • Cashews - 12
  • Cloves - 8
  • Cardamom - 3
  • Shahjeera - 1 Tsp.
  • Cinnamon - 1 Inch
  • Onions - 3 big
  • Tomatoes - 5
  • Green Chillies - 4
  • Curry Leaves
  • Kasoori Methi - 1 Tbsp.
  • Red Chilli Powder - 1 1/2  Tbsp.
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Cumin Seeds - 1 Tsp
  • Water - 1 Cup
  • Coriander Leaves
  • Curd - 1/2 Cup
Preparation:
  • In the bowl, add soya chunks and add hot water.
  • Soak for about 5 Minutes.
  • After 5 minutes, remove and keep aside.
  • In a blender add cashews, cloves, cardamom, cinnamon, and shah jeera.
  • Blend to coarse powder then add water and blend to smooth paste.
  • In a pan add oil, cumin seeds.
  • When seeds splutter, add onions along with salt.
  • Mix well and saute till it changes colour.
  • Then add green chilies and curry leaves.
  • Mix well and saute till it releases aroma.
  • Then add turmeric powder and ginger garlic paste and mix well.
  • Saute well till it releases aroma, then add water along with curd and mix well.
  • Saute well till it cooked well.
  • Then add tomatoes along with red chili powder and mix well.
  • Close and cook for about 5 Minutes.
  • After 5 Minutes, tomatoes become soft and mushy.
  • Now add blended masala along with green peas and soaked soya chunks, fenugreek leaves, and water.
  • Mix well and again close and cook for about 15 minutes while mixing in-between.
  • After 15 minutes everything is cooked well. Finally, add coriander leaves and mix well.
  • Serve hot with jeera rice or roti along with the side dish of your favorite rasam and fry curry and enjoy.
