Brown rice is packed with fiber and has a low glycemic index. It releases sugar slowly and takes longer to digest. This way it helps in regulating metabolism and maintaining steady blood sugar levels. It is one of the weight-loss food.
How to cook brown rice?
Brown rice can be cooked in many many ways as it is slightly tricky to cook as one needs to soften the outer layer bran layer so it may take a longer time to cook. One is by cooking it like regular rice. For this clean and soak the rice for about 1 hour, and then boil the rice on high flame, when the rice gets boil simmer and cook for about 15 minutes. The second way is to cook in the pressure cooker, it is one of the easy ways to cook brown rice. Clean and soak the rice, then add the soaked rice into the pressure cooker and cook for about 3 to 4 whistles depends on the brand of the pressure cooker. The third way to cook in a rice cooker, this is also an easy method to cook brown rice. Clean and soak the rice and then add this soaked rice along with water and add this to the rice cooker and switch on the cooker. That's it when the rice is cooked well without water it automatically switches off. And another way is to cook the brown rice with more water. Clean and soak the rice for about 1 to 2 hours. Then boil water, when the water gets to boil, add soaked rice and cook well. Cook till the rice is done and remove it from the water and keep it aside till the moisture leaves. This post is all about brown rice dal khichdi done with toor dal and brown rice. This is one of the simple recipes done with just toor dal, tomatoes, and spices. Ingredients:
  • Brown Rice - 1 Cup
  • Toor Dal - 1/2 Cup
  • Ghee - 2 Tbsps.
  • Oil - 3 Tbsps.
  • Bay leaves - 2
  • Cloves - 3
  • Cardamom - 5
  • Shahjeera - 1/2 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Mustard Seeds - 1 Tsp.
  • Onion - 1
  • Salt - As Required
  • Curry Leaves
  • Mint Leaves - 1 Bunch
  • Green Chillies - 3
  • Ginger Garlic Paste - 1 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Tomatoes - 3
  • Red Chilli Powder - 1 Tbsp.
  • Coriander Powder - 1 Tsp.
  • Kasoori Methi - 1/1 Tbsp.
  • Coriander Leaves - 1 Bunch

Preparation:
  • In a bowl clean the brown rice with water about 3 times and soak in water for about 1 to 2 hours
  • In another bowl clean and soak the toor dal for about 10 minutes.
  • In a pressure cooker add ghee and oil.
  • When the ghee melts, add all masala of bay leaves, cloves, cardamom, shahjeera, cumin seeds, mustard seeds, and cinnamon.
  • Saute till it releases aroma.
  • Then add onions along with salt and mix well.
  • Saute well till it changes color.
  • Then add green chilies, curry leaves, and mint leaves.
  • Mix well and saute well.
  • Saute till it releases aroma.
  • Then add ginger garlic paste and turmeric powder.
  • Mix well and saute till it changes color.
  • Add tomatoes along with red chili powder and mix well.
  • Saute well till the tomatoes become soft and mushy.
  • Then add soaked brown rice and toor dal and saute for about 1 minute.
  • Add water and mix well.
  • Bring to boil and then add kasoori methi, coriander powder, and coriander leaves.
  • Mix well and pressure cook with 3 whistles.
  • Serve hot with onions, raita, and pachi pulusu, and enjoy.
