An egg is a wonderful source of protein and one of the most versatile foods can be used to make many delicious dishes. One such amazing dish is that of egg pulusu, where boiled eggs are just simmered in cumin garlic tamarind gravy. It has a nice aromatic cumin garlic smell coupled with the flavored tangy taste of tamarind. Check out the recipe below of a delicious egg recipe to savor at home during lunch or at dinner parties.

This post is of village-style boiled egg curry done with onions and tamarind juice. Each region has its own style of making egg curry. Some regions add potatoes, drumsticks, coconut milk, etc. Some will do with onion gravy, tomato gravy, tomato cashew gravy, etc. But, in old days, they use to do with tamarind juice. People there will use fewer tomatoes or no tomatoes in the egg curry. And all the sweetness in the curry comes from the onions. As they consider egg is hot to the body and the use of onions decreases the heat from the body. Onions are natural coolant. This is one of the delicious, easy, and tasty egg curries.

For this recipe clean and soak the tamarind in water for about 20 minutes. When the tamarind is soaked well and becomes soft then extract juice from the tamarind. First, boil the eggs and sauteed the egg with less oil and masala. This makes the eggs take the tamarind juice when they are simmered in gravy. This egg curry can be paired with plain dosa, idli, plain rice, Bargara rice, ghee rice, or jeera rice depending upon your choice.

Ingredients:

  • Eggs - 7
  • Onions - 6
  • Green Chillies - 4
  • Curry Leaves
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Tamarind - large lemon size
  • Water - As Required to soak
  • Tamarind water - 2 1/2 Cups
  • Red Chilli Powder - 1 Tbsp.
  • Coriander Powder - 1/2 Tbsp.
  • Coriander Leaves
  • Turmeric Powder - 1/2th Tsp.
  • Fenugreek Seeds - 1/4th Tsp.
  • Cumin Seeds - 1 Tsp.
  • Mustard Seeds - 1/2 Tsp.
  • Cumin Powder - 1/2 Tsp.
  • Kasoori Methi - 1/2  Tbsp.
Cumin Garlic Masala Ingredients:

  • Cumin seeds - 1/2 Tbsp.
  • Garlic - 1 Garlic Bulb Or 15 to 20 Garlic Cloves

Sauteeing Boiled Eggs:

  • Oil - 1 Tbsp.
  • Red Chilli Powder - 1 Tsp.
  • Salt - 1/4th Tsp.
  • Turmeric Powder - 1/4th Tsp.
  • Boiled Eggs - 6

Preparation:
  • In a bowl add tamarind, clean, and soak in water for about 15 minutes.
  • In a pan add oil, when oil gets hot.
  • Add fenugreek seeds, mustard seeds, and cumin seeds.
  • Saute for 15 seconds, then add onions along with salt and mix well.
  • Saute well till it changes color, then add green chilies, curry leaves, turmeric powder, and ginger-garlic paste.
  • Mix well and saute till it releases aroma.
  • Then add tamarind juice along with red chili powder, and bring to boil.
  • In the meantime in another pan add oil, then add boiled eggs along with red chili powder, turmeric powder, and salt.
  • Saute for 2 Minutes.
  • When the tamarind juice gets to boil, add sauteed boiled eggs, kasoori methi, coriander powder, chopped boiled egg, and mix well.
  • Close and simmer for about 15 minutes.
  • Finally, add coriander leaves and serve hot with plain rice and enjoy.

  • Add fenugreek seeds, mustard seeds, and cumin seeds.
  • Saute for 15 seconds, then add onions along with salt and mix well.







  • Saute well till it changes color, then add green chilies, curry leaves, turmeric powder, and ginger-garlic paste.
  • Mix well and saute till it releases aroma.









  • Then extract juice from soaked tamarind and the juice along with red chili powder, and bring to boil.




  • In the meantime in another pan add oil, then add boiled eggs along with red chili powder, turmeric powder, and salt.
  • Saute for 2 Minutes.









  • In a blender add cumin and garlic coarsely.





  • When the tamarind juice gets to boil, add sauteed boiled eggs, kasoori methi, coriander powder, chopped one boiled egg, and mix well.
  • Close and simmer for about 15 minutes.







  • Finally, add coriander leaves and serve hot with plain rice and enjoy.
