Almost many of us need a taste of pickle with every meal. We all have grown up eating delicious, crunchy, and tangy pickles, paired with plain rice and ghee. Pickle just makes the food taste better. Every household has its unique pickle recipes. But, have you ever tried spicy chicken pickle? Check out the recipe below for the unique pickle recipe of fried chicken coated with ginger garlic gravy with freshly squeezed lemon juice and grounded spices, which tempts us to pick a chicken piece even after our meals.

The process of making pickles is a tradition that is passed on through generations. Different households have different styles of making pickles. Some of the most common pickles in south India are mango pickles, tomato pickles, lemon pickles, and amla pickles. Each pickle has a different taste of its own and has its own health benefits. Usually, lemon pickle is kept especially for the summer season. Lemon pickle helps to reduce body temperature. And the mango pickle is kept to have for year-long and mostly during the cold climate. As everyone knows amla has its own health benefits. Making pickles is considered an art, the art of preservation or fermentation but for us, it is a creation of unique accompaniment that goes with every meal. 

Today's post is about making the chicken pickle. Ofcourse it is one of the unique pickles with rustic flavors. If the pickle is kept with proper measurement, one can store this for about a month. For this pickle, clean the chicken well before making it. After cleaning the chicken marinate the chicken without adding the salt. Salt is not added because during the fermentation of the pickle chicken pieces consume the salt from the gravy. Now boil and fry the chicken till it becomes light golden brown. Don't over fry the chicken as it makes the pieces very hard to eat.

They are different methods of keeping the chicken pickle. One is with coriander powder masala and another with sesame seeds powder masala. This chicken pickle is kept with coriander powder and masala. For this dry roast the all the seeds very well on low flame and make powder. Mix all to the ginger garlic paste and rest for about 8 hours.

For any pickle salt and oil plays a vital role. Salt adds flavor, draws moisture, and inhibits bacterial growth. Whereas oil on the other hand acts as a barrier to prevent the ingredients from becoming dry and keeps them moist. Adding the perfect amount of salt and oil results in a delicious long-lasting pickle.

Chicken Marination:

  • Boneless Chicken - 250 g
  • Red Chilli Powder - 1/2 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Ginger Garlic Paste - 1/2 Tbsp.

Masala:

  • Coriander Seeds - 3 Tbsps.
  • Mustard Seeds - 1/2 Tbsp.
  • Fenugreek Seeds - 1/4th Tsp.
  • Cumin Seeds - 1/2 Tbsp.

Chicken Pickle Ingredients:

  • Oil - 3/4th Cup
  • Ginger Garlic Paste - 4 Tbsps.
  • Red Chilli Powder - 5 Tbsps.
  • Salt - 2 Tbsps. Or As Required
  • Turmeric Powder - 1/4th Tsp.
  • Garam Masala Powder - 1 Tsp.
  • Lemon Juice - 1/4th Cup.

Preparation:
  • Firstly Clean the chicken then marinate the chicken with red chili powder, turmeric powder, and ginger garlic paste and mix well. 
  • Marinate it for about an hour. 
  • Then boil the chicken and fry the chicken well. In another dry roast all the seeds and blend to a fine powder.
  •  In the same pan add oil then add ginger garlic paste, mix well and saute well till it releases aroma. 
  • When the ginger garlic paste becomes cool, add red chili powder, salt, fine masala powder, turmeric powder, and garam masala and mix well. 
  • Then add this to fried chicken along with lemon juice and mix well.
  •  Close and rest for about 8 hours.
  • After 8 hours it releases oil, serves with plain hot rice, and enjoys.
