An elegant, and scrumptious dessert blend of basmati rice, almonds, sugar, and milk, flavored with cardamom and few strands of saffron. Indian desserts are somethings that one can never get enough of and are never restricted to just special occasions of festivals. A typical function or event in an Indian household should end with a spoonful of delectable desserts. While we indulge in the traditional kheer made with rice, Sabudana, bambino cooked in milk, sugar, and nuts. Phirni is a milk pudding, somewhat like kheer but also not. Kheer is made with rice, milk, and sugar but phirni is the same as kheer but we let the milk thicken slightly more and laced with crunchy nuts and dry fruits on top and usually served in Matka.

Phirni is a traditional Indian milk pudding easy to make and heavenly in taste. The regular phirni is made with milk, basmati rice, sugar, and cardamom, with time many households have started an experiment with a variety of flavors and ingredients in phirni like Kesar phirni, almond phirni, pistachio phirni, mango phirni, rose phirni, etc.

Today's post is about badam phirni. This badam phirni is not only thick and flavourful but also super tasty and traditional. Cooking phirni is a time taking process, like soaking the rice and almonds, then simmering the milk to get thick, and cooking the rice completely in milk. Usually, this phirni is served in new Matkas, the earthy smell of the new Matkas gives us a heavenly taste.

After cooking the phirni, it is allowed to be set in the fridge for about 24 hours. When the phirni is completely set served this chilled phirni with nuts and dry fruits on top.

Ingredients:
  • Milk - 4 Cups
  • Almonds - 50 g
  • Sugar - 150 g
  • Basmati Rice - 75 g
  • Cardamom - 1 Tsp.
  • Saffron - 1 Tsp.
  • Water - As Required For Soaking
  • Mix Dried Fruits - As Per Your Choice
  • New Matka Or The Old
Preparation:

  • In a bowl add basmati rice.
  • Add required water for soaking and soak for about 30 minutes.
  • After 30 minutes, remove water and blend coarsely.
  • In another bowl soak almonds in hot water, then peel the almonds.
  • Add the coarse blended rice into 1 cup milk and mix well without any lumps.
  • In a saucepan, add 3 cups of milk and bring to boil.
  • When the milk boils, add saffron and mix well.
  • Boil for more than 2 minutes.
  • When the milk slightly becomes thick.
  • Add powdered almond sugar powder and mix well.
  • Mix well till the sugar dissolves completely.
  • Cook till the rice is completely cooked.
  • Now pour the phirni into new matka.
  • Keep aside till it becomes slightly warm and keep in fridge till it set.
  • Refrigerate for about 24 hours.
  • After 24 hours, serve chilled badam phirni with mixed dry fruits and enjoy.
