As many of us know, an egg is a wonderful source of protein and one of the most versatile foods that can be used to make many delicious dishes. If we have eggs in stock, we don't need to worry about a single meal. From Omelette in breakfast to egg curries for lunch and Anda paratha for dinner. As we know Anda bhurji is one of the famous and popular recipes, which is a very easy, quick, and tasty recipe. When this anda bhurji is combined with layered crunchy cabbage, is one of the perfect and delicious meals one can't get enough of.
Cabbage is one of the nutritious layered leafy vegetables that can be eaten raw or cooked. Cabbage recipes are usually prepared by boiling the cabbage in hot water mixed with salt and ginger pieces to cut down the smell. Cabbage has many health benefits that include anti-aging and anti-cancer properties and also rich in an excellent source of vitamin C and vitamin A.
For this recipe, I grated the cabbage. Grating the cabbage is optional but, using grated cabbage in the recipe makes the dish super tasty and delicious. Don't mix the egg as soon as added to cabbage, allow the eggs to cook for about some time then mix the egg mixture with grated cabbage.

- Grated Cabbage - 3 Cups
- Eggs - 4
- Oil - 4 Tbsps.
- Cumin Seeds - 1 Tsp.
- Mustard Seeds - 1 Tsp.
- Shahjeera - 1/2 Tsp.
- Onion - 1
- Green Chillies - 3
- Salt - As Required
- Curry Leaves
- Ginger Garlic Paste - 1/2 Tbsp.
- Turmeric Powder - 1/4th Tsp.
- Red Chilli Powder - 1/2 Tbsp.
- Coriander Powder - 1 Tsp.
- Garam Masala Powder - 1/2 Tsp.
- Coriander Leaves
Preparation:
- In a pan, add oil and mustard seeds, cumin seeds, shahjeera, onions, and salt.
- Mix well and saute till it changes color.
- Then add green chillies, curry leaves, ginger-garlic paste, and turmeric powder.
- Mix well and saute till it releases aroma.
- Then add grated cabbage along with red chili powder and mix well.
- Close and cook the cabbage for about 5 minutes.
- Then add 4 eggs, mix and again close and cook for about 5 minutes.
- After 5 minutes, slowly mix the cabbage egg.
- Again close and simmer for about 10 minutes.
- Finally add coriander powder, garam masala, and coriander leaves.
- Mix well and serve hot with plain rice along with dal rasam or pachi pulusu, or with roti and enjoy.
