Ridge gourd is also called " Beerakaya " In Telugu, "Turai" In Hindi, and " Peerkangai " In Tamil. Ridge gourd is extremely rich in dietary fiber and helps in weight reduction. It regulates blood sugar levels and boosts immunity. Turai helps to reduce constipation and removes dead skin cells and is beneficial for the skin.
Ridge Gourd Chana Dal Curry - is one of the tasty and aromatic curries that goes well either with roti or even with plain rice. For this recipe, first, peel and chop the ridge gourd and soak the chana dal for about 20 minutes. Ridge Gourd chana dal curry is a masala-based curry with dry coconut and garam masala mixture. Here in this recipe, I used grated and roasted wet coconut which I stored when I get massive amounts of coconut at home usually at the time of any puja like Satyanarayana puja, etc.
To store the wet coconut, as soon as or as early as possible wash the coconut in running water and clean and dry the coconut. After drying the coconut, grate the coconut or blend the coconut into chunks. Then roast the coconut chunks till it changes color. When the coconut releases all the moisture, keep it aside till it becomes cool. We can store this in an airtight container at out for about 2 weeks or in the fridge for about 2 to 3 months. Note: we should not add a drop of oil while roasting the coconut. Whenever we want to use dry coconut in the recipe we can use this roasted coconut. Another way is to clean, chop and refrigerate.
Turai chana dal curry is one of the tasty and easy curries when we have soaked chana dal. It just tastes like the non-veg. This curry goes well either with plain rice or even with roti / Naan or even with dosa. Finally, I want to highlight some of my recipes like,

Ingredients:
- Ridge Gourd - 500 g
- Chana Dal - 1/2 Cup
- Total Water - 1 Cup
- Oil - 4 Tbsps.
- Mustard Seeds - 1 Tsp.
- Cumin Seeds - 1 Tsp.
- Onions - 1
- Green Chillies - 4
- Curry Leaves
- Ginger Garlic Paste - 1/2 Tbsps.
- Turmeric Powder - 1/4th Tsp.
- Kasoori Methi - 1 Tbsp.
- Coriander Seeds Powder - 1/2 Tbsp.
- Red Chilli Powder - 1 Tbsp.
- Coriander Leaves
Coconut Masala Ingredients:
- Grated & Roasted Coconut - 1/4th Cup Or 4 Tbsps.
- Cloves - 5
- Cardamom - 3
- Cinnamon - 1 Inch
- Shahjeera - 1 Tsp.
Preparation:
- In the bowl, add chana dal and rinse with water and soak in water for about 20 minutes.
- In Pan add oil along with mustard seeds and cumin seeds.
- When the seeds splutter, then add onions along with salt and mix well.
- When the onions change colors.
- Now add green chilies along with curry leaves and mix well.
- Mix well and saute for about 2 minutes, then add ginger garlic paste, and turmeric powder.
- Mix well and saute till it releases an aroma.
- In a blender add roasted and grated wet coconut along with cloves, cardamom, cinnamon, and shahjeera.
- Blend to a fine powder.
- Now add this coconut masala powder to the pan and mix well.
- Mix well and saute till it releases oil.
- Then add soaked chana dal and mix well and saute.
- Add water and mix well
- Close and cook for about 2 minutes.
- After 2 minutes, open and add ridge gourd, tomatoes, and red chili powder.
- Mix well and saute.
- Now close and cook for about 10 minutes.
- After 10 minutes, add kasoori Methi and coriander powder and mix well.
- Again close and cook for about 5 minutes.
- After 5 minutes, finally, add coriander leaves and mix well serve hot with plain hot rice and enjoy.
