The okra is usually washed, dried, and then cut into pieces. The gravy is made by sauteing the onions, green chilies, chopped garlic and ginger in oil until they release aroma. Then ladies finger, tomatoes are addedand cooked till it becomes soft. Then, Yogurt is added by blending along with cumin powderto create a flavorful base.The dish is simmered for a while tp let the flavours meld together.

Ingredients:
- Bhindi | Okra - 200 g
- Oil - 4 Tbsps.
- Mustard Seeds - 1/2 Tsp.
- Cumin Seeds - 1/2 Tsp.
- Onion - 1
- Green Chillies - 5
- Curry Leaves
- Turmeric Powder - 1/4th Tsp.
- Tomatoes - 3
- Curd - 1 1/2 Cups
- Red Chilli Powder - 1 Tbsp.
- Coriander leaves
- Cumin Powder - 1/2 Tsp.
- Finely Chopped Ginger - 1 Tbsp.
- Finely Chopped Garlic - 1 Tbsp.
Preparation:
- In the pan, add oil, then add mustard and cumin seeds.
- When the seeds splutter, add onions along with salt.
- When the onions turn, translucent.
- Add green chilies, curry leaves, chopped ginger, and garlic.
- Mix well and saute well till it releases aroma.
- When done add okra, tomatoes along with red chili powder.
- Mix well and saute for about 2 minutes, then close and cook for about 10 minutes.
- After 10 minutes, okra is cooked well.
- In the meantime, add curd to the blender and blend smooth.
- Now add water and then add this smooth curd along with cumin powder and mix well.
- Again close and cook for about 10 minutes.
- Finally, add coriander leaves and mix well and serve hot and enjoy.
