Boondi ki sabzi is a flavorful unique dish commonly found in North India and Rajasthani cuisine. Boondi is a drop-sized fried ball made of besan (gram flour ) that we often use to make boondi ki raita and jaljeera. A sweetened version is popularly used to make prasad or boondi laddu too. The origin of boondi all the way to Rajasthan but it is now readily available throughout the country to make different dishes in plain, salted, and masala form.
Boondi ki sabzi is done with plain boondi without any flavors. It is one of the quick and easy recipes to make at home in less than 10 minutes. Plain boondi is readily available in the market or can be done fresh by mixing gram flour with water to form a smooth batter. Pour the batter through a perforated spoon into hot oil, creating small, round balls. Fry until golden brown and crisp, Drain on paper towels. Fresh and instant tasty boondi is ready to use for sabzi.
Boondi curry is a versatile dish that offers a delightful combination of textures and flavors, making it a favorite in many Indian households. It is typically served with Indian breads like roti, naan, paratha, or even cam paired with steamed rice or Jeera rice for a wholesome meal.

Ingredients:
- Boondi - 1 1/4th Cups
- Oil - 3 Tbsps.
- Mustard Seeds - 1 Tsp.
- Cumin Seeds - 1 Tsp.
- Onions - 3 Medium Size
- Salt - As Required
- Ginger Garlic PAste - 1/2 Tbsp
- Turmeric Powder - 1/4th Tsp.
- Tomatoes - 3 Medium Size
- Garam Masala - 1 Tsp.
- Water - 4Cups
- Green Chillies - 4
- Curry Leaves
- Coriander Leaves ( Optional )
- Red Chilli Powder - 1/2 Tbsp.
Preparation:
- In a pan add oil
- When the oil gets hot add mustard seeds and cumin seeds.
- When the seeds splutter, add onions.
- Mix well and saute till the onions change color.
- Then add turmeric powder, ginger garlic paste and mix well.
- When it releases aroma add tomatoes, and red chilli powder and mix well.
- Close and cook till the tomatoes become soft and mushy.
- When the tomatoes are soft add water along with garam masala.
- Mix well and boil the water.
- When the water gets boiled add green chilies, curry leaves, and plain boondi and mix well.
- Close and cook for about 2 minutes.
- After 2 minutes boondi ki sabzi is ready to serve with roti, naan, or with plain rice, and enjoy.
