For this recipe lobia is soaked overnight or before 8 hours. Ingredients:
Chicken Marination:
- Chicken - 500g
- Salt - 1 Tsp.
- Ginger Garlic Paste - 1 Tbsp.
- Turmeric Powder - 1/4th Tsp.
- Red Chilli Powder - 1 1/2 Tbsps.
- Oil - 1 Tbsp.
Cooking Lobia Chicken Ingredients:
- Oil - 4 Tbsps.
- Cardamom - 4
- CLoves - 8
- Shahjeera - 1 Tsp.
- Cumin Seeds - 1 Tsp.
- Onion - 1 Big
- Green Chillies - 4
- Curry Leaves
- Methi leaves
- Ginger Garlic Paste - 1 Tbsp.
- Turmeric Powder - 1/4th Tsp.
- Tomatoes - 3
- Water - 1/2 Cup
- Garam Masala - 1 Tsp.
- Coriander Leaves
Coconut Masala Ingredients:
- Dry Coconut - 1/4th Cup
- Coriander Seeds - 1 Tbsp.
Preparation:
- First clean and marinate the chicken with marination ingredients and rest for about 30 minutes to 1 hour.
- In Pan add oil, when the oil get heated up add cardamom, cloves, cinnamon, shahjeera and cumin seeds.
- Saute for a second and add onions along with salt.
- Mix well and saute till the onions changes colour.
- Then add green chillies, curry leaves, methi leaves and mix well.
- Saute well till the leaves nice aroma.
- Then add ginger garlic paste along with turmeric powder and mix well.
- Saute till it releases aroma.
- Now add soaked lobia along with marinated chicken and mix well.
- Saute for about 5 minutes till the chicken changes colour.
- Then add tomatoes and mix well and close and cook for about 10 minutes.
- In another pan dry roast the dry coconut and coriander seeds and blend to fine powder.
- After 10 minutes chicken releases water.
- Now add garam masala, dry coconut masala along with water and mix well.
- Again close and cook for about 10 minutes or till the chicken is soft and tender.
- Finally add coriander leaves and serve hot with rice, chapati, roti or naan.
