Experience the essence of Rajasthan in your kitchen with this delicious Gatte Ka Pulao. Gatte are spiced dumplings made from gram flour ( Besan ), seasoned with spices like red chili powder, turmeric, and carom seeds ( Ajwain), then shaped into cylindrical dumplings and boiled until firm.

Video Recipe Of Gatte Ka Pulao | Ram Khichdi


Ingredients:

For the Gatte ( Gram Flout Dumplings )

  • Gram Flour - 1 cup or 1/2 cup
  • Red Chilli Powder - 1/2 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Carom Seeds ( Ajwain ) - 1 Tsp.
  • Curd Or Yogurt - 1/4th Cup
  • Oil - 2 Tbsps.
  • Salt - As Required
  • Water - As Required

For The Pulao:

  • Basmati Rice - 2 Cups
  • Water - 4 Cups
  • Ghee - 2 Tbsps.
  • Oil - 4 Tbsps.
  • Bay leaves - 2
  • Cinnamon Stick - 1 Inch
  • Cloves - 8
  • Cardamom - 5
  • Shahjeera -1 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Dagad Phool - 1 TBsp.
  • Kapok Bud - 2 or 3
  • Marathi Moggu
  • Star Anise - 1 or 2
  • Nutmeg Powder - 1 Tsp.
  • Onions - 2
  • Green Chillies - 4 to 5
  • Curry Leaves
  • Mint Leaves - 1 or 2 Bunches
  • Ginger Garlic Paste - 1/2 Tbsps.
  • Turmeric Powder - 1/4th Tsp.
  • Biryani Masala - 1 Tsp.
  • Garam Masala - 1 Tsp.
  • Water - 4 Cups
  • Coriander Leaves


Preparation

Preparing The Gatte:

  • Combine gram flour, red chili powder, turmeric powder, carom seeds, salt, curd, and oil, and mix well in a mixing bowl.
  • Mix well, by adding curd as needed to form a firm dough
  • Rest for about 10 minutes and then divide the dough into small portions and roll each into long, cylindrical shapes.
  • Boil water in a pan. Once the water starts boiling gently drop the cylindrical gatte dough into the water. Cook for 10-12 minutes until the gatte rises to the surface and is firm.
  • Once done remove the gatte from water and let them cool. Slice them into 1/2-inch pieces and keep them aside.


Preparing The Gatte Ka Pulao:

  • Heat the ghee and oil in a large pan.
  • Then add bay leaves, cloves, cardamom, cinnamon, shahjeera, marathi moggu, nutmeg powder, kapok buds, star anise, cumin, and  dagad phool. Saute until aromatic.
  • Then add sliced onions and green chillies. Saute until the onions are golden brown. Then, add herbs like curry leaves, mint leaves, turmeric powder, and ginger garlic paste.
  • Cook for about 2 minutes
  • Then add boiled gatte along with biryani masala and mix well. Saute for about 2 minutes.
  • Then add 4 cups of water along with garam masala and bring to a boil.
  • Adust salt as required.
  • When the water gets boiled add soaked rice and mix well.
  • When the water gets boiled close and cook for about 10 minutes.
  • After 10 minutes open and add coriander leaves and mix well.
  • Again close and simmer for about 5 minutes.
  • Done serve hot with raita, yogurt, or a side of pickles or pickle onions for a complete Rajasthani Meal.
