Ingredients:

  • Mushrooms - 300g
  • Onions - 2
  • Green Chilies - 3
  • Curry Leaves
  • Mint Leaves
  • Coriander Leaves
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Cumin Seeds - 1 Tsp.
  • Tomatoes -2
  • Whisked Curd - 1/4th Cup
  • Garam Masala - 1/2 Tsp..
  • Biryani Masala - 1/2 Tsp.
Cooking Rice Ingredients:

  • Rice - 2 Cups
  • Ghee - 1 Tbsp.
  • Oil - 2 Tbsps.
  • Bay leaves - 2
  • Dagad Phool
  • Kapok buds
  • Cloves - 4
  • Cardamom - 3
  • Cinnamon - 1Inch
  • Shahijeera - 1 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Mace
  • Nutmeg powder - 1/2 Tsp.
  • Star Anise - 1
  • Water - As Required
Preparation:
  • In a pan add oil along with onions and green chillies.
  • When the onions turn translucent, add curry leaves, and fenugreek leaves and saute well.
  • Saute well till it releases an aroma.
  • Add mint leaves and saute well, then add ginger garlic paste, and turmeric powder.
  • Mix well and saute until it releases aroma. Then add tomatoes, red chili powder, and Kashmiri chili powder and mix well.
  • Then add whisked curd and mix well continuously.
  • Then add mushrooms and mix well.
  • Now close and cook for about 10 minutes.
  • In another pan add ghee along with oil.
  • When the ghee melts add the biryani masala ingredients and saute well till it releases aroma.
  • Then add water and bring to boil, then add soaked rice and cook till 80 percent.
  • After 10 minutes open the add coriander leaves and mix well.
  • Remove half of the curry and spread the curry.
  • Now layer the rice along with mint leaves, coriander leaves, and fried onions.
  • Close and simmered for about 15 minutes.
  • After 15 minutes it releases aroma, finally remove and serve hot with raita and onion salad.
