- Broccoli - 1 Cup
- French Beans - 1 Cup
- Carrots - 2
- Potatoes - 2
- Green Peas - 1/4th Cup
- Coconut Milk - 3 Cups
- Onion - 1
- Green Chillies, Slit - 8
- Ginger - 1 Tbsp.
- Garlic - 1 Tbsp.
- Curry Leaves
- Oil - 4 Tbsps.
- Oil - 2 Tbsps.
- Crushed Pepper - 1/2 Tsp.
- Cloves - 4
- Cardamom - 2
- Cinnamon - 1 Inch
- Shahijeera - 1 Tsp.
- Bay Leaves - 2
- Salt - 1 Tsp.
- Coriander Leaves.
- Heat oil in a pan, add slit green chilies, and curry leaves, and saute till it releases aroma.
- Add chopped ginger, and garlic and saute well.
- Then add chopped onions, carrots, potatoes, french beans, and broccoli to the pan. Stir well.
- Pour in 1/2 cup water and let vegetables cook on medium heat until soft.
- Lower the heat, add coconut milk and cashew milk of 10 cashews.
- In a small pan add oil, then add bay leaves, cloves, cardamom, shahijeera, cinnamon, and curry leaves.
- Saute well till it releases an aroma.
- Now add the tempering to the coconut milk, mix well, and let it simmer for 2-3 minutes. Do not boil.
- Finally, add the fresh coriander leaves and stir well.
- Serve hot with appam, steamed rice, or bread.
