Ingredients
Marination Ingredients:
- Mutton - 500 g
- Onion - 1
- Tomatoes - 2
- Green Chillies - 3
- Curry Leaves
- Red Chilli Powder - 1 1/2 Tsp.
- Kashmiri Chilli Powder - 2 1/2 Tsp.
- Turmeric Powder - 1/2 Tsp.
- Ginger Garlic Paste - 1 Tbsp.
- Salt - 1 Tsp.
Spices & Seasoning:
- Oil - 1 Tbsp.
- Dry Coconut - 1/4th Cup
- Cashews - 10
- Coriander Seeds - 1 Tbs[.
- Shahijeera - 1 Tsp.
- Cloves - 8 to 10
- Cardamom - 3
- Cinnamon - 1 Inch
- Water - As Required To Make Paste
Cooking Curry Ingredients:
- Sesame Oil - 4 Tbsps.
- Mustard Oil - 3 Tbsps.
- Cumin Seeds - 1/2 Tsp.
- Dry Red Chillies - 2
- Onion - 1
- Mint Leaves - 1 Bunch
- Fenugreek Leaves - 1 Bunch
- Curry Leaves
- Ginger Garlic Paste - 1 Tbsp.
- Turmeric Powder - 1/2 Tsp.
- Water - 1 Cup Or As Required
- Salt - As Required
- Biryani Masala - 1/2 Tsp. ( To Order WhatsApp )
For Garnishing:
- Fresh Coriander Leaves
- Curry Leaves
Preparation:
Preparing the masala:
- In a pan add oil, roast the chopped dry coconut for 2 minutes, and then add cashews and roast until golden brown.
- Then add coriander seeds, cloves, cardamom, shahijeera and saute for about 2 minutes.
- Set it aside to cool. the gring it into a fine paste.
Marination Preparation:
- Firstly clean and wash the mutton and keep aside
- Then add all the marination ingredients and keep aside for about 15 minutes.
Saute the spices and onions:
- Heat oil in a pressure cooker.
- Add cumin seeds, dry red chilies, and onions.
- Saute till onions turn golden then add mint leaves, fenugreek leaves, and curry leaves.
- Mix well and saute until it releases aroma.
- Then add ginger garlic paste and turmeric powder and cook until the raw smell goes away.
Cooking The Mutton:
- Add marinated mutton and saute on high flame for 4 to 5 minutes and then close and cook for about 5 minutes on medium flame.
Simmer & Cook:
- Now after 5 to 10 minutes mutton releases water add roasted coconut masala paste along with a cup of water and mix well.
- Pour enough water to cover the mutton, then cover and cook
- Pressure cooker: Cook for 4 to 5 Whistles on medium heat.
- Slow Cooking: Cover and simmer for 40-50 minutes until Tender.
Final Touch:
- Once the mutton is cooked, add biryani masala and mix well.
- Simmer for another 5 to 7 minutes until the gravy thickens.
- Garnish with fresh coriander leaves and extra curry leaves.
Serving Suggestions:
- Serve hot with steamed rice, roti, naan, or paratha.
