About Vegetable Toor Dal Khichdi
Toor dal khichdi is a classic Indian comfort food made by cooking rice and split pigeon peas together. Adding vegetables such as capsicum, carrot, and tomato, along with a touch of biryani masala, elevates this humble dish into a fragrant, satisfying meal without overpowering its simplicity.
Ingredients:
- Rice - 3/4th Cup
- Ghee - 1 Tsp.
- Oil - 3 Tbsps.
- Mustard Seeds - 1/2 Tsp.
- Cumin Seeds - 1/2 Tsp.
- Shahijeera - 1/2 Tsp.
- Cloves - 2
- Cardamom - 2
- Cinnamon - 1 Inch
- Dry Red Chillies - 2
- Green Chillies - 3
- Onion - 1
- Curry Leaves
- Capsicum - 1
- Carrot - 1
- Tomato - 1
- Toor Dal - 1/4th Cup
- Biryani Masala - 1/2 Tsp.
- Red Chilli Powder - 1 Tsp.
- Coriander Leaves
- Mint Leaves
- Curry Leaves
- Ginger garlic paste - 1/2 Tbsp.
Preparation:
- Firstly, soak the rice and dal for about 15 minutes.
- In a pressure cooker, add the oil.
- Add masala ingredients like mustard seeds, cumin seeds, shahjeera, cloves, and cardamom, as well as dry red chillies.
- Then add green chilies, onions, and salt.
- When the onions change colour, add mint leaves, curry leaves, and saute till it releases aroma.
- Then add capsicum, carrot, ginger-garlic paste, turmeric paste, and saute till the veggies cook 50 percent.
- Now add tomatoes, along with soaked rice and dal, along with biryani masala, red chilli powder.
- Bring the water to a boil and then pressure cook for 3 whistles.
- When the pressure leaves, completely open and add coriander leaves.
- Finally, serve with any side dish, onion, and raita, and enjoy.
