Curry Leaves Powder | Karivepaku Podi - with detail photo and video recipe. Healthy, tasty and diet recipe of Curry Leaves had many nutritional benefits. It helps to reduce stress, cholesterol levels, morning sickness and even to reduce weight. Curry leaves powder is good for diabetics and eyesight. If NOT in diet one can add ghee/oil with plain rice for more flavourful and tasty.
Curry Leaves powder is done by drying the curry leaves under the sun but, nowadays it's easy to make the leaves dry very fast by dry roast or by the micro oven. I usually prefer micro oven to dry the leaves instead of dry roast on the stove because its keep the green color of the leaves as it is.
Now in this recipe, I showed by dry roasting the curry leaves to make it user-friendly to all. For this firstly cleanly wash and dry the leaves overnight. On the next day, it becomes easy to roast the leaves. All the ingredients used in this recipe should be roasted well for more shelf life of the powder. The main ingredients to prepare any curry leaf powder are urad dal, chana dal, tamarind, and coriander seeds. But, many other recipes came out in recent days to make more healthy and tasty. Here I used sesame seeds for favorable taste as well as healthy.

Ingredients:
- Curry Leaves - 40g /4 Bunches
- Dry Red Chillies - 20 g
- Urad Dal - 35 g / 3 Tbsps.
- Chana Dal - 35 g / 3 Tbsps.
- Coriander Seeds - 15 g / 3 Tbsps.
- Sesame Seeds - 35 g / 4Tbsps.
- Garlic Cloves - 25 g / 32 Cloves
- Tamarind - 25 g
- Cumin Seeds - 1 Tbsp.
- Mustard Seeds - 1 Tbsp.
Preparation:
- Wash and dry the curry leaves overnight.
- Then dry roast the curry leaves till crunchy.
- Then dry roast urad dal, chana dal, and coriander till it releases aroma and turns a brown color.
- Remove and keep aside.
- Then dry roast sesame seeds, cumin, and mustard seeds.
- Remove and keep aside.
- Finally, roast dry red chilies and tamarind till the chilies turn lightly black.
- Remove and keep aside.
- Let all the dry roasted ingredients becomes cool.
- Then blend sesame seeds, cumin, and mustard seeds first.
- Then add urad dal, chana dal, and coriander seeds.
- When it was blended well add dry red chilies, garlic cloves, tamarind, and curry leaves and blend to a fine powder.
- That's it curry leaves powder is ready without oil. Serve in hot plain rice/idly/dosa and enjoy.
