Chicken is the perfect leftover for reuse. Many different can be done with the single chicken leftover. Here I used chicken gravy with very fewer pieces. Whether you have a chicken piece or not it doesn't matter for this recipe. To make the recipe tasty and rich as the fresh one I used eggs and sauces along with the spicy touch. This Makes you feel it as a fresh egg fried rice.

Ingredients:
- Leftover chicken Curry
- Oil - 4 Tbsps.
- Mustard Seeds - 1 Tsp.
- Cumin Seeds - 1 Tsp.
- Onions - 1 Big Chopped
- Salt - As Required
- Green Chillies - 4 Chopped
- Curry Leaves
- Mint Leaves
- Ginger Garlic Paste - 1 Tbsp.
- Turmeric Powder - 1/4 Tsp.
- Vinegar - 1 Tbsp.
- Soya Sauce - 2 Tbsps.
- Garam Masala Powder - 1 Tsp.
- Eggs - 3
- Cooked Rice - 200 g
- Cumin Powder - 1/2 Tsp.
- Pepper Powder - 1 Tbsp.
- Coriander Leaves
Preparations:
- In a pan add oil, mustard seeds and cumin seeds.
- Then add chopped onions along with salt and mix well.
- Saute till onions turn a light brown color.
- Then add green chilies, curry leaves, and mint leaves.
- Mix well and saute till it releases a nice aroma.
- Then add turmeric powder and ginger garlic paste .
- Mix well and saute till it releases nice aroma.
- Then add leftover chicken curry along with vinegar, soya sauce, and garam masala.
- Mix well and saute well.
- Scramble eggs.
- Then add cooked rice along with cumin and pepper powder.
- Close and simmer for about 10 minutes.
- That's It hot hot egg fried rice with leftover chicken curry is done.
