Potato Egg Curry | బంగాళాదుంప గుడ్డు కూర | Special Desi Recipes

Potato Egg Curry - with detail recipe.Simple and easy potato egg curry with 3 potatoes, 2 eggs, and 1 tomato. When you are leftover with few veggies try this simple yet delicious and super tasty recipe that goes well either with chapati, roti or even with plain rice.

Potato egg curry is one of the delicious and easy recipes for potato and egg lovers. The main ingredients used in this recipe are potatoes and eggs. As everyone knows, an egg is rich in protein as the same the potato is also nutritious and healthy especially for heart health as it contains fiber, potassium, vitamin C & B6.

For this recipe chop all the ingredients very finely and cook very well. Adding masala and powders are optional like coriander seeds powder and garam masala is optional but, adding these give an extra taste as well as flavor to the recipe.

Ingredients

  • Aloo - 3
  • Eggs - 2
  • Tomato - 1
  • Oil - 4 Tbsps.
  • Mustard Seeds - 1 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Onions 2
  • Green Chillies - 3
  • Curry Leaves
  • Ginger Garlic Paste - 1 /2 Tbsp.
  • Red Chilli Powder - 1/2 Tbsp.
  • Coriander Powder - 1 Tsp.
  • Garam Masala Powder - 1/2 Tsp.
  • Turmeric Powder - 1/4th Tsp.
  • Salt - As required
  • Dry Red Chillies - 2
  • Kasoori Methi - 1/2 Tbsp.

Preparation:

  • In a pan add oil, then add mustard and cumin seeds.
  • When seeds splutter, add onions, green chilies along with salt and mix well.
  • When onions change color add dry red chilies and green chilies and mix well.
  • Then add curry leaves, ginger-garlic paste, turmeric powder and mix well.
  • When it releases aroma, add chopped potato and close and cook for about 5 minutes.
  • When potatoes are cooked 80 percent, add tomatoes along with red chili powder and cook till the tomatoes are soft.
  • When tomatoes are cooked well, add coriander powder, garam masala powder, kasoori methi powder and mix well.
  • Then add eggs and slowly mix and close.
  • Cook for about 10 minutes on low flame.
  • Then slowly mix and cook for more about 5 minutes.
  • Finally, add coriander leaves ( optional ) and serve hot.
  • This curry goes well either with roti, chapati or even with plain rice.
