Bottle Gourd Kofta - is one of the flavourful and delicious fried dumplings recipes. Bottle gourd is also called "Lauki", is very low in calories and is an excellent vegetable in the diet. This light-green-colored oblong-shaped vegetable is incredible and keeps you hydrated especially during summer. It is rich in fiber, antioxidants, and an excellent vegetable for gut and digestion. Many of the kids don't like to have Lauki in their food, it is considered as one of the boring vegetables. But with little creativity, this boring vegetable can be turned into a super tasty, most lovable dish for all ages.

Today's post is about Lauki ki kofta. As most of them know the famous malai kofta, meat kofta, etc but Lauki ki kofta is one of the tasty, delicious, and most popular vegetarian recipes. Kofta is a Mughlai cuisine done with deep-fried dumplings and then tossed in rich and smooth onion- tomato gravy with the basic touch of herb and spices. If you want to cut back calories, one can also air-fry the koftas or bake them.

To make the kofta and frying them without breaking the kofta while fry is an art. For this first peel and grate the bottle gourd and then add salt. Adding salt to the grated Lauki helps to remove excess water from the Lauki, because of its tremendous water content. Then add spices along with besan and then coated with cornflour makes the koftas crisp outside, soft and delicious inside.

Preparing gravy to serve this kofta is also very easy with some basic spices and ingredients. This kofta gravy is a combination of spicy and tangy flavourful with the touch of some sweetness from onions.

Serve Lauki ki kofta hot with a garnish of coriander leaves. Lauki ki kofta can be pair up with rice, or any bread of your choice like roti, naan, chapati, etc.

Ingredients:

Preparing Bottle Gourd Kofta ingredients:

  • Bottle Gourd - 1 Big
  • Salt - 1 Tsp.
  • Green Chillies - 2
  • Red Chili Powder - 1/2 Tbsp.
  • Turmeric Powder - 1/2 Tsp.
  • Coriander Leaves
  • Ginger Garlic Paste - 1 Tsp.
  • Gram Flour - 1/2 Cup
  • Cornflour - As Required

Preparing Kofta Gravy Ingredients:
  • Oil - 3 Tbsps.
  • Onions - 4
  • Salt - 1 Tsp.
  • Tomatoes - 6
  • Dry Coconut - 1/2 Cup
  • Cashews - 10
Preparing Bottle Gourd Kofta Ingredients:
  • Butter - 1 Cup
  • Oil - 3 Tbsps.
  • Bay Leaves - 2
  • Cardamom - 4
  • Cloves - 6
  • Cumin Seeds - 1 Tsp.
  • Shahi jeera - 1/2 Tsp.
  • Cinnamon - 1 Inch
  • Green Chillies - 4
  • Curry Leaves
  • Turmeric Powder - 1/2 Tsp.
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Red Chilli Powder - 2 Tsp.
  • Garam Masala Powder - 1/2 Tsp.
  • Bottle Gourd Water
  • Coriander Powder - 1 Tsp.
  • Coriander Leaves
  • Kasoori Methi - 1 Tbsp.
Kofta Preparation:
  • Take a long bottle of gourd and clean.
  • After cleaning, peel the bottle gourd and then grate it.
  • Now add salt to the grated bottle gourd, and then rest for about 15 minutes.
  • Bottle Gourd releases water, remove water from the bottle gourd.
  • Now take this water removes grated bottle gourd and then add red chili powder, green chilies, salt, turmeric powder. ginger-garlic paste, and coriander leaves.
  • Mix well and then add gram flour and mix well.
  • Take a small mixture and then make the kofta.
  • Roll the kofta in the cornflour powder and coat the kofta.
  • Now deep fry the kofta till it changes golden brown color.
Gravy Preparation:
  • In a pan add oil then add dry coconut.
  • Mix well and saute till it changes color.
  • Then add onions along with salt and mix well.
  • Saute well till it changes color then add tomatoes and cashews.
  • Mix well, close, and cook till the tomatoes become soft and mushy.
  • When tomatoes are soft, remove and keep them aside.
  • When the onion-tomato mixture becomes cool, remove and blend to smooth puree.
Bottle Gourd Kofta Curry Preparation:
  • In a pan add butter along with oil.
  • Mix well and saute till it releases aroma.
  • Then add green chilies along with curry leaves and mix well.
  • When it releases aroma, add turmeric powder and ginger garlic paste.
  • Mix well and saute till it releases aroma then add smooth puree along with red chili powder, kasoori methi, garam masala powder, and mix well.
  • Saute for about 2 minutes then add a bottle of gourd water and mix well.
  • Close and cook for about 10 minutes.
  • After 10 minutes, mix well and add fried koftas and mix well.
  • Close and cook for about 5 minutes.
  • After 5 minutes, add coriander leaves and mix well.
  • Serve hot with plain rice, roti, rasam, and enjoy.

  • Close and cook for about 10 minutes.



  • After 10 minutes, mix well and add fried koftas and mix well.
  • Close and cook for about 5 minutes.





  • After 5 minutes, add coriander leaves and mix well.
