" Sambar " the word that makes us remember a plate of puffy hot idlis or the dosa. Sambar is a staple food in South Indian Cuisine. A south Indian stew made of pulses, mixed vegetables along with the touch of herbs and spices. It is one of the popular dishes paired with idli, dosa, vada, and uttapam. In a South Indian hotel, the meal is never complete with the bowl of sambar.


When this delicious sambar is the perfect accompaniment with idli, dosa, vada, etc, then why not with rice. Why not cooking sambar and rice together. Sambar rice Or Sambar Sadam is the famous one-pot Tamil cuisine, which becomes popular in many restaurants and hotels now.


Sambar Rice is a quick mix of vegetables, lentils, spices, and herbs which is a power pack of many benefits. You may wonder what special, it's just a sambar. let's check the benefits by breaking down the ingredients. Sambar is made of pulses. Dal is a good source of vegetarian protein. So sambar rice is also high in protein.


As we use mixed vegetables like drumsticks, brinjal, tomatoes, bottle gourd, etc, and various other fiber-rich seasonal vegetables. So sambar rice is also full of fibers. Any dal-based stew is high in antioxidants and the use of tamarind extract, turmeric powder, mustard seeds, curry leaves, and other herbs and spices have a number of health benefits ranging from good digestion to high immunity.


This post is all about sambar rice, down with mixed vegetables, lentils, tamarind juice along with spices, and herbs. Finally, I want to highlight some of my recipes

Ingredients:

Cooking Sambar Rice Ingredients:

  • Rice - 1 Cup
  • Cooked Toor Dal - 1/2 Cup
  • Thick Tamarind Juice - 1/2 Cup
  • Oil - 2 Tbsps
  • Potato - 1
  • Carrots - 2
  • Bottle Gourd - 1/4th
  • Yellow Cucumber - 1
  • Tomatoes -2
  • Drumsticks - 20 pieces or 1 1/2 Stick.
  • Brinjal ( Egg Plant ) - 3
  • Turmeric Powder - 1/2 Tsp.
  • Salt - As Required
  • Red Chilli Powder - 1 1/2 Tbsps.
Sambar Rice Masala Powder Ingredients:

  • Chana Dal - 1 Tbsp.
  • Toor Dal - 1 Tbsp.
  • Split Urad Dal - 1/2 Tbsp.
  • Coriander Seeds - 1 Tbsp.
  • Fenugreek Seeds - 1/4th Tsp.
  • Cumin Seeds - 1 Tsp.
  • Curry Leaves
  • Garlic Cloves - 6
Tempering Ingredients:

  • Ghee - 2 Tbsps.
  • Oil - 2 Tbsps.
  • Mustard Seeds - 1 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Curry Leaves
  • Crushed Garlic - 2 Tbsps.
  • Dry Red Chillies - 1
Preparation:

Sambar Masala Preparation:
  • In a pan add chana dal, too dal, split urad dal, coriander seeds, fenugreek seeds, cumin seeds, curry leaves, and garlic cloves.
  • Mix well and saute on low flame till it releases aroma.
  • When it releases aroma, remove and keep aside till it becomes cool.
  • When it becomes cool, add to blender and blend to a fine powder.
Cooking Sambar Rice Preparation:
  • In a pressure cooker, add oil along with potato, carrot, bottle gourd, yellow cucumber, drumsticks, tomatoes, and brinjals.
  • Mix well and saute for about 1 minute and cook for 2 minutes.
  • After 2 minutes, mix and add turmeric powder, salt, and red chili powder.
  • Mix well, then add 6 cups of water and bring to boil.
  • Then add green chilies along with sambar powder, cooked toor dal, thick tamarind juice, and mix well without any lumps.
  • Then add washed rice and mix well.
  • Close and pressure cook with 3 whistles
Tempering Ingredients:
  • In a pan add ghee along with oil.
  • Then add mustard seeds and cumin seeds, curry leaves, crushed garlic, and dry red chilies.
  • Mix well and saute till it releases aroma.
  • Then add this to cooked sambar rice and mix well.
  • Finally, add coriander leaves, mix well and serve hot with papad and fried chilies.

Detailed Photo Recipe Sambar Rice

Sambar Masala Preparation:
  • In a pan add chana dal, too dal, split urad dal, coriander seeds, fenugreek seeds, cumin seeds, curry leaves, and garlic cloves.











  • Mix well and saute on low flame till it releases aroma.
  • When it releases aroma, remove and keep aside till it becomes cool.




  • When it becomes cool, add to blender and blend to a fine powder.

  • In a pressure cooker, add oil along with potato, onions, carrot, bottle gourd, yellow cucumber, drumsticks, tomatoes, and brinjals.










  • Mix well and saute for about 1 minute and cook for 2 minutes.




  • After 2 minutes, mix and add turmeric powder, salt, and red chili powder.


  • Mix well, then add 6 cups of water and bring to boil.
  • Then add green chilies along with sambar powder, cooked toor dal, thick tamarind juice, and mix well without any lumps.









  • Then add washed rice and mix well.
