Lufa can be of 2 types one is ridge gourd with firm and have ridges all over them, and another variety is sponge gourd which is similar to ridge gourd but, with the only difference is sponge gourd has a smooth surface. Fully ripes sponge gourd have high volume of fibrous which is being used as a cleaning agent ( utensils ) and making shoe-soles and table mats.

Both have many health benefits individually. But, sponge gourd has more health benefits when compared to ridge gourd. Sponge gourd has many ayurvedic medicinal properties. Besides blood purification and skin treatment, it is also helpful in curing inflammation and constipation.

Sponge gourd stuffed with spices can be made into a curry that is served with rice and Rotis. It is often cooked alone without adding the gravy. The vegetable is also prepared by adding milk and with chana dal masala or as a stir fry.

Ingredients:
  • Sponge Gourd - 1 1/2 Kgs
  • Oil - 4 Tbsps.
  • Mustard Seeds - 1/2 Tsp.
  • Cumin Seeds - 1/2 Tsp.
  • Urad Dal - 1/2 Tbsp.
  • Chana Dal - 1/2 Tbsp.
  • Onions - 2
  • Green Chillies - 5
  • Curry Leaves
  • Turmeric Powder - 1/2 Tsp.
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Coriander Powder - 1 Tsp.
  • Coriander Leaves
Preparation:
  • In a pan add oil along with mustard seeds, cumin seeds, onions, and salt.
  • Mix well and saute for about 1 minute.
  • Then add chana dal and urad dal and saute well.
  • Mix well and saute till it changes color.
  • Then add green chilies, curry leaves, turmeric powder, and ginger-garlic paste.
  • Mix well and saute till it changes color and releases aroma.
  • Then add sponge gourd and mix well.
  • Saute well, then close and cook for about 5 minutes.
  • After 5 minutes, the sponge gourd releases water.
  • Mix well and again close and cook for about 5 minutes.
  • After 5 minutes, it releases more water, mixes again close, and cooks for about 15 minutes on high flames.
  • After 15 minutes, the sponge gourd is cooked well.
  • Finally, add coriander powder and coriander leaves and mix well.
  • Serve hot with plain rice or with roti and enjoy.

  • After 5 minutes, it releases more water, mixes again close, and cooks for about 15 minutes on high flames.




  • After 15 minutes, the sponge gourd is cooked well.
  • Finally, add coriander powder and coriander leaves and mix well.





  • Serve hot with plain rice or with roti and enjoy.
