Different soups have different tastes and have many different health benefits. But making the soup with cruciferous veggies is different and many steps backward to do. Adding the right ingredients makes any soup delicious and healthy.

Today's post is about thick and creamy broccoli soup without added cream, milk, or flour. Most of the broccoli soups are done by adding thick cream, or flour to make the soup thick and creamy. This post is with no flour, no dairy vegan-based broccoli soup done with potato, cashews, and basil leaves.

As we all know basil leaves are the oldest herbs known for their healing and healthful properties have been the most treasured knowledge across the world. And it has many health benefits as it supports liver function and helps to detoxify the body. Basil leaves promote a healthy gut and diabetic management. Consumption of basil could also soothe a fever, headache, sore throat, cold, cough, and flu. Its anti-inflammatory and immune-boosting properties help to manage stress and fight against depression. 

Another main ingredient used in this recipe is broccoli. Broccoli is a good source of fiber and protein and contains iron, potassium, and calcium, as well as vitamins A, C, E, K, and a good array of B vitamins. This soup comes with the goodness of broccoli and nuttiness of cashews, creaminess from potatoes, it is a wholesome soup packed with nutrients and it would be better if you eat those foods that not only bring some warmth but also can prevent and combat infections.

Ingredients:

  • Broccoli - 400 g
  • Oil - 2 Tbsps.
  • Onion - 1
  • Cloves - 3
  • Cardamom - 4
  • Cinnamon - 1 Inch
  • Garlic Cloves - 2 Tbsps. Or 20 Cloves
  • Cashews - 10
  • Potato - 1 Small Or 1/2 Medium Potato Or 1/4th From Big Potato
  • Basil Leaves - Approx 40
  • Pepper Powder - 1 Tsp.
  • Salt - As Required
  • Water - 2 Cups
Preparation:

  • In a pan add oil.
  • Then add onion, cloves, cardamom, bay leaves, garlic, cashews, and potato and mix well.
  • Saute well till the onions changes color.
  • Then add broccoli and saute for about 1 minute.
  • After 1 minute, add water along with basil leaves.
  • Bring to boil then close and cook for about 10 minutes.
  • After 10 minutes, strain and blend to smooth paste.
  • Again add this to the pan along with water, pepper powder, basil leaves, and salt.
  • Mix well without any lumps. 
  • Boil for about 2 minutes.
  • Then serve hot and enjoy.
