With the right recipe, right ingredients, we can convert this vegetable into some delicious meals. Usually, Parwal is done with potato or stuffed Parwal. Parwal do Pyaza is one of the flavourful recipes that can help you whip up a comforting meal both for lunch and dinner.
For this recipe firstly clean and peel the Parwal and then chop. Parwal just looks like ivy gourd but cooks fast than the ivy gourd and absorbs them more flavor. Parwal do Pyaza is one of the tasty and spicy recipes with the smoky flavor of capsicum, crunchy touch of onions, and juicy tomatoes.

Ingredients:
- Parwal - 470 g
- Onions cubes - 2 Onions
- Green Capsicum - 1
- Yellow Capsicum - 1/2 Capsicum
- Tomato - 1
- Oil - 5 Tbsps.
- Mustard Seeds - 1/2 Tsp.
- Cumin Seeds - 1 Tsp.
- Onion - 1
- Curry Leaves
- Kasoori Methi - 1 Tbsp.
- Ginger Garlic Paste - 1/2 Tbsp.
- Turmeric Powder - 1/4th Tsp.
- Tomatoes - 3
- Red Chilli Powder - 1 Tbsp.
- Water - 1 Cup
- Garam Masala Powder - 1/2 Tsp.
- Coriander Powder - 1 Tsp.
- Coriander Leaves
- Curd - 1/2 Cup
- Green Chillies - 5
- In the pan first add oil along with onions cubes, green capsicum, and yellow capsicum.
- Mix and saute for about 1 Minute.
- Then add tomato cubes and saute for more than 1 minute and keep aside.
- In the same pan, add oil then add mustard and cumin seeds.
- When the seeds splutter, add onion along with salt and mix well.
- Saute well till it changes color, then add ginger garlic paste and turmeric powder.
- Mix well and saute till it releases aroma.
- Then add tomatoes along with red chili powder and mix well.
- Close and cook for about 5 minutes or till the tomatoes become soft and mushy.
- When the tomatoes are soft and mushy, add curd and mix well.
- Mix continuously without forming curdles.
- Then add peeled and chopped Parwal and mix well.
- Now add water and mix well.
- Bring a boil, then add slit green chilies along with curry leaves and kasoori methi and mix well.
- Close and cook for about 10 minutes or till the Parwal is cook 80 percent.
- When the Parwal is cooked, then add sauteed cubes along with garam masala and coriander seed powder and mix well.
- Again close and cook for about 10 minutes.
- Finally, add coriander leaves, mix well and serve hot and enjoy.
