Winter is known for its vibrant range of vegetables. And these seasonal vegetables also bring with them an opportunity to cook different new dishes that we have waiting to dig into, for a good part of the year. Radish is one such vegetable with a sharp aroma and taste. As most of them know how to cook the radish root but, even the radish greens are also edible with a crisp texture, peppery flavor, and contain more nutritious than its white root.

The pungent smell of radish makes people dislike it, but it comes with a host of many health benefits. Radish is a powerhouse of potassium, vitamin C, and Fiber. The water content in radish keeps the skin moisturized and the body hydrated. It helps in treating piles, constipation, cardiovascular diseases, diabetics, urinary, and kidney disorders.

As the radish though the radish leaves. Even the radish leaves are very beneficial to health as it helps to cure jaundice as it helps to cleanse our liver and stomach and get rid of excess bilirubin. Radish leaves are helpful to boost immunity and to lose weight. As the radish leaves are the detoxifying agent and also helps in the digestive process. Leaves are rich sources of iron, calcium, vitamin C and phosphorous.

Today here am sharing radish green fry. Before making this recipe clean and chop the radish leaves. Be careful while cleaning the radish leaves as the stem contain some harsh texture. Then before 10 minutes, clean and soak the moong dal. This recipe is one of the tasty, healthy and easy recipe  which goes good with chapati, roti or naan and even with plain rice when it is accompanied with sambar or  rasam or pachi pulusu ( Telangana special )

Ingredients:
  • Radish Greens - 4 Radish Greens
  • Radish - 1/2 Cup Or 1/2 Radish
  • Oil - 4 Tbsps.
  • Mustard Seeds - 1/2 Tsp.
  • Cumin Seeds - 1/2 Tsp.
  • Onion - 1 Big
  • Green Chillies - 4
  • Curry Leaves
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Moong Dal - 1/4th Cup
  • Tomato - 1 Big
  • Red Chili Powder - 1/2 Tbsp.
  • Coriander Seeds Powder - 1 Tsp.
  • Coriander Leaves
  • Water - 1/2 Cup

Preparation:

  • In a pan add oil, when oil gets heated up add mustard and cumin seeds.
  • When the seeds splutter, add onions, green chilies along with salt.
  • Mix well and saute till the onions turn translucent
  • Then add curry leaves, ginger garlic paste, and turmeric powder.
  • Mix well and saute till it releases aroma.
  • Then add chopped radish cubes along with 10 minutes soaked moong dal and mix well for about 30 seconds.
  • It starts releasing an aroma, Now add radish leaves, tomato along with red chili powder and mix well.
  • Now close and cook for about 5 minutes.
  • After 5 minutes, add 1/2 Cup of water and mix well.
  • Again close and cook for about 10 minutes.
  • After 10 minutes, the water evaporates and releases an aroma.
  • Finally, add coriander powder along with coriander leaves and mix well.
  • Serve hot with roti| Naan | Plain Rice Or as a side dish for sambar, rasam, or charu.
