Mushrooms are edible fungus that can provide several important nutrients. Fried rice is a dish of cooked rice that has been stir-fried in a wok or a frying pan and is usually mixed with other ingredients such as chicken, vegetables, seafood, soya chunks, or meat. But this fried rice is done with mushrooms with the touch of capsicum and garlic flavor.

- Mushrooms - 200 g
- Butter - 2 Cubes
- Oil - 2 Tbsps.
- Cumin Seeds - 1 Tsp.
- Onion - 1
- Ripe Red Chillies - 4
- Curry Leaves
- Chopped Garlic - 2 Tbsps.
- Capsicum - 1
- Tomatoes - 2
- Soya Sauce - 2 Tbsps.
- Vinegar - 1 Tbsp.
- Crushed Pepper - 1 Tsp.
- Coriander Leaves
Preparation:
- In the pan add butter along with oil.
- Heat till the butter melts, then add cumin seeds and saute.
- Then add onions along with salt and mix well.
- Mix well and saute till it changes color, then add chopped garlic along with curry leaves and mix well.
- Saute well till it releases the aroma.
- Then add crushed pepper, capsicum, mushroom, and tomatoes.
- Mix well and close and cook for about 5 minutes.
- After 5 minutes, the mushroom releases water.
- Again mix and close and cook till the mushroom is cooked well.
- Finally, add coriander leaves and mix well.
- Then add vinegar, soya sauce, and chili sauce and mix well.
- Then add cooked rice and mix well.
- Close and simmer for about 10 minutes.
- Finally, add spring onions and coriander leaves and mix well.
- Serve hot and enjoy with raita.
