Paneer is the ultimate ingredient to all our vegetarian cravings. It is one of the super versatile ingredients in our kitchen that can be used to whip up countless delicious dishes from rich and creamy paneer makhani to classic paneer bhurji. Paneer bhurji is one of the classic dishes among all the paneer recipes. It is the popular North Indian dish made with Indian cottage cheese ( Paneer ), along with tomatoes, herbs, and spices. Paneer bhurji is of many kinds like it can be cooked with onion gravy, or with dry onions, and even with tomatoes. Whatever the recipe, and how we cook, paneer is just irresistible.

Homemade Paneer Making:

For this paneer bhurji we don't need the block of paneer and not even the store brought paneer. Paneer can be done at our home itself if we have full-fat milk. Here in this recipe, I used homemade paneer done with full-fat 1-liter milk. For 1 liter milk, I got approx of 180 g paneer. You may think it is one of the big processes and expensive but, homemade paneer is one of the fresh and delicious paneer and it is not expensive. It is so simple that we need just only 5 ingredients like full-fat milk, salt, lemon, water, and cloth. I use to take milk daily from the local milk vendor. Whenever I want to make paneer, I asked him to bring full-fat milk. As soon as the milk came, first, boil the milk. When milk gets to boil, add lemon juice into the milk. Adding lemon juice will break the milk and it forms crumbles. When it separates paneer from milk, drain the water from the cloth. Then wash the paneer with plain water and drain the water completely. Now add a pinch of salt to the paneer and mix. Then tie the paneer into the block and place a heavyweight on it. It helps to form the paneer block as we got it from outside. For paneer bhurji we don't need to tie and place a heavyweight on it. For this recipe, we directly use the crumbled paneer into the tomato gravy. Try once of making like this, your paneer bhurji will be one of the creamy classical dishes among all and give goodness to your meal.

Ingredients:

  • Paneer - 180 g
  • Oil - 3 Tbsps.
  • Mustard Seeds - 1/2 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Onion - 1
  • Green Chillies - 4
  • Curry Leaves
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Red Chilli Powder - 1 1/2 Tbsps.
  • Kasoori Methi - 1/2 Tbsp.
  • Coriander Powder - 1 Tsp.
  • Garam Masala Powder - 1/4th Tsp.
  • Tomatoes - 5 Big
  • Coriander Leaves
  • Malai ( Cream ) - 2 Tbsps.
Preparation:
  • In a pan, add oil. When oil gets heated up add mustard and cumin seeds.
  • When the seeds splutter, add onions along with salt and mix well.
  • Mix well and saute till the onions change color.
  • When the onions change color, add green chilies, curry leaves, ginger-garlic paste, and turmeric powder.
  • Mix well and saute till it releases aroma.
  • Then add tomatoes along with red chili powder.
  • Mix well, close, and cook till the tomatoes are mushy and soft.
  • When the tomatoes are soft and mushy, add coriander powder, kasoori methi, and garam masala powder.
  • Mix well, then add malai and scrambled paneer and mix well.
  • Close and simmer for about 10 minutes.
  • After 10 minutes, when the curry releases oil, add coriander leaves and serve hot with roti, dosa, naan, and even with plain or jeera rice.

Detail Photo Recipe Of Paneer Bhurji
