Simple, delicious, easy, and spicy fish fry, where fish simmered and marinated in awesome simple herbs and spices and cooked to perfection, makes for a great appetizer or a side to a meal. As we all know fish is low in fat and high in omega-3 fatty acids. and it is easily available in the southern region, fish makes a prominent feature in the local food and for good reason. Lip-smacking range of fish preparation from thick gravy to fish fries that makes mealtime extremely satisfying in many ways to impress different palates.
They are different types of fish available to cook but, picking the right fish for the right recipe makes the dish perfect.
For this recipe. I used Murrel Fish ( Korramenu ) which has more flesh and easy to eat. Firstly clean the fish with rice flour, salt, and turmeric. And then soak the fish in saltwater for about 15 minutes. This process makes the fish release less odor or the fish smell. After soaking in saltwater remove and marinate the fish and rest for about 1 hour. Marinating the fish makes the fish juicy and tasty by infusing the marinated masala. Has this is the basic fish fry we usually do at home without much ingredients and efforts with all the simple ingredients which are readily available at our home.

Ingredients:
- Fish - 430 g
- Red Chilli Powder - 1 1/2 Tbsp.
- Salt - 1 Tsp.
- Ginger Garlic Paste - 1/2 Tbsp.
- Turmeric POwder - 1/4th Tsp.
- Lemon Juice - 1/2 Lemon Or 2 Tbsps.
- Curry Leaves
- Coriander Leaves
- Green Chillies - 3
Preparation:
- In a bowl, take the cleaned fish.
- Then add red chili powder, salt, ginger-garlic paste, turmeric powder, curry leaves, coriander leaves, green chilies, and lemon juice.
- Mix well and massage masala to every piece.
- Mix and rest the fish for about 1 hour.
- After 1 hour, add this masala fish to the hot oil and cook on both sides till it becomes golden color.
- When done serve hot with onions, or as a side dish with flavored rice like ghee or jeera rice.
- For the next batch remove the leftover masala in the pan, again very little oil, and fry the rest of the masala. We can mix this removed masala into the plain rice and can enjoy it.
