Baby potatoes are one of the underrated ingredients. We often ignore them, using up in regular potatoes in dishes. But the flavor and texture offered by these tiny root vegetables are unique. To begin with this recipe, firstly clean the potatoes very well and pressure cook the potatoes till 80 percent. Then peeling the skin of the potatoes is optional. 


The original mature of baby potatoes is brought out best with the delicious spices used in this recipe. The masala used in this recipe is freshly roasted and grounded to enhance the flavor of the recipe. Many baby potato recipes are readily available but this recipe is done with easily available home ingredients and with less oil.

Masala Ingredients:

  • Dry Coconut - 1/2 Cup
  • Chana Dal - 1 Tbsp.
  • Urad Dal - 1 Tbsp.
  • Cardamom - 3
  • Cloves - 6
  • Cinnamon - 1 Inch
  • Shahjeera - 1 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Coriander Seeds - 1 Tbsp.
  • Dry Red Chillies - 5
  • Garlic Cloves - 10
  • Tamarind - Lemon Size
  • Garlic Cloves - 10

Baby Potato Fry:
  • Oil - 4 Tbsps.
  • Mustard Seeds - 1/2 Tsp.
  • Cumin Seeds - 1 Tsp.
  • Onion - 1
  • Green Chillies - 4
  • Curry Leaves
  • Ginger Garlic Paste - 1/2 Tbsp.
  • Turmeric Powder - 1 Tsp.
  • Sesame Seeds - 1 Tbsp.
  • Coriander Leaves
  • Baby Potatoes - 500 g
Preparation
  • Firstly clean the baby potatoes in running water very well.
  • Boil and peel the skin of the baby potatoes and keep them aside.
  • In a pan add dry coconut, chana dal, urad dal, cardamom, cloves, cinnamon, shah jeera, cumin seeds, dry red chilies, coriander seeds, tamarind, mix well and saute till it releases aroma.
  • Then remove and keep aside till it becomes cool.
  • When it becomes cool completely blend tp fine powder and keep aside.
  • In the pan add oil along with mustard and cumin seeds, and onions along with salt.
  • Mix well and saute till it changes color.
  • Then add green chilies, curry leaves, ginger-garlic paste, and turmeric powder.
  • Mix well and saute till it releases aroma.
  • Then add boiled potatoes and mix well and saute for about 2 minutes.
  • Then add the fine masala powder and mix well.
  • Sprinkle water if required and mix well.
  • Finally, add sesame seeds and coriander leaves and mix well.
  • Serve hot with any rasam or curd curry and enjoy.
