Raw mango is the star fruit of the spring season. The tangy flavor complements the weather beautifully. Spinach ( Palak ) is a green leafy vegetable with an abundance of nutrients. When the taste of mango combines with fresh leaves is the perfect recipe for a scrumptious lunch. Check out the recipe below for a light and fresh palak recipe with a mild garlic seasoning and some tangy, sour green mango along with a touch of fresh coconut.


For many of the kid's palak ( Spinach ) is never been on their list of favorites. But, parents used to do and serve this nutrient leafy vegetable, which makes the kids eat without other options. Many recipes but most often we used to prepare the palak dal with mango or only the palak ki sabzi. But, the selection of heart-warming spinach recipes brings flavors to your plate with the use of the traditional ingredients in unconventional ways. That type of recipe is the palak mango ki sabzi.


The taste of mango along with a touch of wet coconut makes a perfect recipe that even the kids can enjoy without hesitation. Once you taste the recipe, you will keep adding the mango to the palak recipe without fail. One may get a doubt if we get addicted to the recipe what's the next when mangoes are not available. There is also a way for that, we store the raw mangoes on a yearly basis so that we can make any recipe with mango yearly at any time. For that, cut the mangoes into pieces and mix turmeric and salt and mix well. Store this in an airtight container for later use.

For this recipe firstly clean the spinach well in the running water to remove impurities. Then peel and chop the mango. In this recipe, I used mustard oil as the combination of mustard oil along with palak gives the perfect taste. And to balance the tanginess in the mango with palak I used cumin seeds powder. Finally, the recipe came out super tasty and makes a scrumptious lunch.

Ingredients:

  • Palak - 3 Cups Or 8 Bunches
  • Oil - 1 Tbsp.
  • Mustard Oil - 2 Tbsps.
  • Cumin Seeds - 1/2 Tsp.
  • Onion - 1
  • Green Chillies -3
  • Crushed Garlic - 1 Tbsp.
  • Turmeric Powder - 1/4th Tsp.
  • Mango - 1/4th Cup
  • Wet Coconut - 1/2 Cup
  • Cumin Powder - 1 Tsp.
  • Salt - As Required
  • Curry Leaves
  • Dry Red Chillies - 2

Preparation:
  • In the pan, add oil, then add cumin seeds along with onions, green chilies, dry red chilies, and salt.
  • Mix well till it changes color.
  • Then add curry leaves, crushed garlic, and turmeric powder.
  • Mix well and saute till it releases aroma then add mango pieces and mix well.
  • Mix well for about 1 minute then add spinach and mix.
  • Close and cook for about 5 Minutes.
  • Spinach releases water, mix well, and again close and cook for 10 minutes.
  • When the spinach is cook well, add cumin powder along with grated coconut and mix well.
  • Again close and cook for about 2 minutes.
  • After 2 minutes, finally, add coriander leaves and mix well, serve and enjoy.
